    Practice makes perfect and this is a recipe that you *need* to develop the skill to identify and fix your baking mistakes in order to improve. Questions I’ve asked myself: Is my almond flour and sugar a fine grain for texture? Have my egg whites been whipped to a stiff peak? Did I over mix the batter when folding in the dry ingredients? I didn’t succeed on my first try, but identifying the issues and correcting them helped me in my future practice.

    another aspect, more so than any other recipe, is "be conscious of where you live" combined with "know your oven". The humidity in the air and temperature change how a macaron will bake, which is the most delicate step.

    As a baker I can say that eventhough they look simple, they’re not, you have to make sure you follow the steps correctly otherwise it won’t rise, you need to be quick but not so quick so the fluff you achieved with the egg whites don’t go down, and on and on, being a baker means to be a perfectionist with every single detail, one thing goes off and everything is screwed bc in baking it’s pretty limited to do changes 99.9% of the time

    I'm a math person, and the best way I saw the differences described was in terms of pi. Cooking is pi=3. Baking was pi= 3.14159.

    You know why it’s so hard to make? Because everyone is hung up on the perfect shape and look.     It’s true but that only goes out to people at home. For a Chef, these macarons need to sell - they need to make the perfect commercial shape for it to be purchased. That’s why the delicate process is involved.

    @-Dont touch my oxygen- I have made it once. It then dawned on me that that shit wasn't hard at all. Although mine had cracks it still tasted like a normal macaroon. They just focuse on the aesthetics really.

    Once i was watching masterchef and i don't remember what the challenge was but this one woman decided to make macarons. I think there were only 45 minutes and all the judges were like "there is no way u can do it". She was like "i didn't even know macarons were hard to make i don't watch masterchef i make them at home all the time". She ended up making then perfect and the judges were shocked.

    The complexity all comes down to how you fold it. Underfold it and you get something thats moist and thin. Overfold it and you get something airy and way too thick.

    Having the right amount of air in the batter is key. First you incorporate a lot of air bc of beating the egg whites so then you press some out when you fold in the dry and wet ingredients and knowing when to stop is what makes the perfect macaron. Too little or too much air causes problems

    DONT FORGET THE SKIN! If you’re making them, after you pipe, let sit on the counter for a few hours so that a ‘skin’ forms on top! It’s how you keep the perfect dome shape, and have an light an airy inside. VERY IMPORTANT!

    The steps are easy enough, but the process isn’t. It’s one of those desserts you rather just buy. It’s possible to overmix, undermix, rest for too long/too short, the weather is too humid and the macarons have a difficult time forming a skin, for the ideal smooth batter you have to sift your dry ingredients multiple times, the bowl you use for the meringue might be just a bit greasy that can affect your meringue, there’s just leftover yolks no one asked for, it doesn’t come out the way you want it to, your batter is too runny, too sweet, you’ve piped it wrong , there’s a lot that can go wrong and it’s just not worth it but of course you do it anyways. Personally these aren’t usually a problem, the only problem is that I live in a very humid place and my macarons just have trouble forming a skin which leads to ugly macarons but actually taste fine. (And they taste better after a few days in the fridge) Edit: not to mention you have to worry about how it looks too since people get so hung up about the way it looks.

    @@Gracelynn78 Yeah that’s called Aged egg whites. You don’t need day old egg whites to make macarons, but they do make the process have a higher success rate, less likely to overwhip while providing a strong meringue with stiff peaks. Personally I choose to skip this step as I don’t have a problem with overwhipping my meringue.

    I remember being a bratty 12 year old and trying to make them when they were trending in 2016, but they didnt look right, so already pissed because I didn't perfectly recreate them first try, I gave some to my grandma who complimented the "nice cookies" and I just angrily responded "they're not cookies, they're MACARONS" and that still haunts me 7 years later

    They’re mostly difficult because of three things. 1.The mixing has to be perfect 2.Altitude will effect how they bake 3.Some ovens just refuse to do it properly

    It's not hard at all though. We made macarons almost weekly when I went to culinary school as we had an own bakery where we would sell what we make so it does not go to waste and for money to fund school trips. anyway, it is very straight forward especially when you have baking mats with macarons template showing the size and for other pastries. Of course when you make it at home it is harder due to most people not having the equipment needed which is something I experience a lot when I bake in the bakery section of the kitchen compared to when I bake at home.

    When my parents had a home bakery, they figured out how to make macarons. Cursed like sailors the entire time, but the results were phenomenal! And the wedding guests LOVED them.

    I tried making macarons two different times. The first time they expanded to the size of my hand and were hollow and crunchy, like a cracker almost, and the second time they all mushed together and were a gooey mess on the pan 😭😭

    just a reminder for people wanting to try this, make sure you leave the macarons to sit for 45 mins to form a shell BEFORE putting them in the oven, if you don’t let them sit and form a shell they will expand and turn into a gooey jelly-like blob, so allow them to sit and form a soft shell before putting them in the oven 🥰

    This is true! My parents make macarons and it took us over a year to get it right! Not just because of imperfections, but because if you miss just once step, they get messed up. If you over/under mix it it’ll be weird, sometimes the temperature isn’t right, etc. The worst mistake I’ve seen with macarons is when they’re hollow on the inside due to a misstep in the baking process.

    When I first tried to make them (with WAY less sugar than I’m supposed to bc my Asian family practically hates sugar), my egg whites wouldn’t whip up, so the batter was super runny and they ended up as crunchy almond cookies (my family loved them though and only complained that they were still too sweet at half of the sugar). Now, I’ve figured out that there might’ve been some grease in the bowl, or I probably got some of the yolks in the bowl (half of the eggs I crack will end up with broken yolks)

    The reason it's so difficult is because one minute too long or too little of mixing it can make the texture go horribly wrong. Same thing with meringues. If you beat the egg whites with sugar one minute too long it's not stiff anymore, and one minute too little they're not stiff yet, and there is no said time, you just have to time it on instinct

    made this a few days ago and did everything with the hand, shaved the almonds and pistachios and stuff, the shell was PERFECT, tasted exactly like the ones you would buy from stores&bakery’s, didn’t add food coloring so looked a bit “rustic” and was out first time ever making it, we even followed a yogurt macaron tutorial but used the measurements to make it pistachio because we didn’t have yogurt powder😀

    Lol I just ordered a Macaron covered cake for my birthday- the chef said he can’t do it before my birthday but he could instead bake a cake with fewer macarons, so that the baking process as well as decorating process is quicker. I agreed, of course- The poor chef lmaooo

    @@feqol thank you! and honestly macarons are my favourite food. like in the WORLD. mainly chocolate macarons. and although we usually don’t do it, my mom said i could get a customised cake so i jumped on the opportunity, although i was fully prepared to be told it wasn’t possible. i was pleasantly surprised, of course.

    As an amateur baker, I can say that I do not find macarons difficult to make. They are simply difficult to make RIGHT. You can make a perfectly tasty macaron quite easily if you aren't so worried about the look. I managed to make really pretty macarons on my first go, but only by doing hours of research and following every recipe point and additional suggestion to a T. It's all about time and patience :)
