Warm Mediterranean Chickpea Lentil Salad
Thought I’d share my story on why I went plant-based while making this delicious salad. I’ve been eating this salad every week for the past 2 months and still crave it even as the weather is getting colder.
Let me know in the comments below if you want to hear more about my plant-based journey!

I just had too much meat.....that I started seeking vegetables. Made me feel a hundred times better and even fixed symptoms that I thought was just normal since I've always had them for the longest time. I'm not completely vegetarian, I still eat a bit of meat and fish every now and then. But it would be easily like months before I eat meat, for like special occasions like parties or events, if I choose. Conforming myself to become purely veg, left me open to get tempted and finally binge eat because I'll think I'll go back to being vegetarian after this meal or this one cheat day. But now I'm not limiting myself and am able to choose a largely vegetarian diet without feeling tempted to "cheat" on my diet, because there is nothing to "cheat" on, I can eat if I really wanted to. And I no longer want to eat meat right now.

As someone who’s extremely sensitive to textures with certain fears about food, going plant based helped me out a hell of a lot more than I realized because it wasn’t my main reason for doing it initially. But after several years I’ve noticed how much more comfortable I am with dishes that just contain beans, vegetables, grains etc compared to dishes with eggs or meat (I don’t even like egg substitutes outside of baking that’s how much I hate anything with texture resembling eggs) and it gives me a sense of being able to control my food anxieties especially when going out and trying new things. ✨

And... don't eat mint chocolate... mint chocolate is so sooo bad for reflux. I don't know what diet I had followed, but mainly home-cooked and healthy foods that were alcaline. And no carbonated beverages. I could eat sweets again only after 3-4 weeks after that alcaline diet because everytime I tried... damn... it was bad. Of your start with acidic foods/vegetables, it won't be helpful or a good strategy. Also... I had a very urgent surgeries when I was 13 and one of them I had to get my gallbladder removed. Ever since then I’ve really bad stomach issues as well, I’m not lactose intolerant and greasy foods, sometimes even salad(depending what’s in it) will cause my stomach to be in so much pain and I’ll have to go to the bathroom. It’s 4 years later and it still has not gone better or went away. I try to be vegetarian or eat less unhealthy foods, I want to do that but my family is not the healthy type I can’t get away from the bad food. When I’m on my own I’m definitely eating healthier for my own sake. Hoping I will no longer have the horrible feeling in my stomach.

I’ve suffered with similar issues my whole life. My biggest indication that my gut wasn’t healthy was severe acne that no medication could touch. I changed my diet to rice (not minute rice), whole foods, zero dairy products unless it’s goat milk, no process food unless it’s a special occasion. Lots of soup, as it tends to keep you hydrated. I’m 33 now and still struggle some but you’ll find balance one day.

Hi. Sorry about you’re discomfort. I’m no doctor, but I’d suggest starting out by totally cutting out dairy. No cow’s milk, cheese, ice cream, none of it. Substitute the cow’s milk and ice cream with nut milk (almond, cashew, etc.) or oat milk, and if you HAVE to have cheese there are a variety of vegan cheeses available now (although they usually have very little nutritional value). Also, I’d suggest adding probiotics every other day, if not every day. This is super important. You can get probiotics by either vegan yogurt, kimchi, kombucha, or probiotic pills. The only dairy that I would say is semi-okay to eat would be yogurt bc of the probiotics and the way it coats your stomach when you’re having discomfort more than vegan yogurt does (for some people). Hope this helps & hope you feel better ❤️ God bless ❤️

This is actually where I am in life! I have Primary Progress Multiple Sclerosis, Crohn’s, hypertension, and who knows what else. I was on the medical merry-go-round with nothing to show for it. Frustrated, I moved to a plant-based diet. My goal wasn’t to cure anything but reduce inflammation (and get closer to a 6-pack if possible 😅). I’m still learning but transitioning to a plant-based diet has vastly increased my energy, mobility, and memory. I’m not cured by any stretch of the imagination, but I’ve been able to do a lot more in a day than I used to!

Same! I had undiagnosed neuropathy in both arms and was in severe pain and had to wear braces all the time. I went to doctor after doctor, test after test and the last doctor I went to, crying and begging for surgery, anything, told me “Sometimes we don’t know what’s wrong and you just have to learn to live with pain.” I was furious and determined to try anything. Cut all meds and went vegan that day. I have healed 90% so far and still getting better. Thanks for sharing, hugs💕✨

I did vegetarian from 21 to 39 and vegan from 39 to 53. The only time I didn’t feel optimal was when I decided to do keto for 2 years because everyone said I would lose the weight I had gained while starting peri menopause. I lost weight, hair, all my strength, my muscles went flat as did my mood, and it was then I decided that what I had been doing for all those years was healthier and I just needed to tweak my plant based diet which is what I did. I’m back to lifting all the heavy weights, enjoying complex carbohydrates and feeling happy and well again. I agree that you need to find what works for you and your health.

I listen to what my brain tells me. I eat a balanced diet that includes meat, fish, dairy, eggs, poultry etc. There are some essential nutrients that the body needs that can only be found in meat and poultry. However, after a couple of days, my body craves vegetables and lots of fruit because they contain fiber and if I don’t eat them, I suffer from severe constipation. I am super healthy, I work out every now and then, I drink plenty of water, I dont smoke and I avoid alcohol, I sleep 7-8 hrs and the only thing I avoid eating is fast food. So yeah, listen to your body and know what your body needs. I saw a channel here on you tube I think, called vegan deterioration and I saw how some people who only eat plant based diets suffer from severe mental and physical problems. So please, dont jump into a diet that may work for someone and not for you. Our bodies are different.💐💚

In fact, because of my ed, I needed to eat a lot of fish, chicken and eggs, and even dairy, so I can quickly get back to a safe weight. I'm currently on a semi-vegetarian diet or however you'd call it. I eat mostly plant-based with some dairy products, rarely, but when I'm losing weight again, I'm eating meat, but it's like, once a month. I think that kind of diet works for me the best so far :0. I'm keeping a healthy weight for over 6 months now, but still, I have days when I cannot force anything for an entire day, but it's much more rarely than before.

I tried plant based diet so many times before because I hate the taste of meat, meat fats, butter, milk etc but it didn't work for me all... The ibs symptoms and fatigue became worse over the time until reach to where I can't handle it anymore. I have I stopped eating so many things and was only eat white rice, chicken breast, and chicken broth until I got better. Now I have eating problems because the food my body accepts are mostly the food I can't handle their taste, so I sometimes lose my appetite completely for days or even weeks... It's really a struggle, I hope one day I'll be able to eat normally like others do.
