This Whole30 Bootleg Shwarma Dinner is a great way to repurpose leftover roast meats.
It's great with roast beef, lamb and even duck. I don't like this with chicken because it can get a bit too dry when reheating in the skillet.
I almost always serve this bootleg shwarma with the chopped salad shown. It's easy, delicious and pairs well with the middle eastern flavours.
Baba Ghanoush is made from roasted eggplant - which is very easy to make from scratch. However, if you don't have any fresh eggplant, you can buy jarred roasted eggplant at most middle eastern grocery stores and at some local ones as well. Look for ones that have no added sugars or fillers.
