RECIPES:
Cherry Chicken Salad:
4 cups of cubed cooked chicken
1/2 cup pecans, coarsely chopped
1 rib celery, finely diced
1 medium onion, minced
3/4 cup dried Michigan Cherries
1/3 cup mayonnaise
1/3 cup plain greek yogurt (or mayonnaise)
1/2 tsp. salt
1/2 tsp. pepper
Combine all ingredients and adjust any seasonings as needed. You can eat it immediately, but I like to let the flavors develop a little while before eating. So I suggest letting it sit in the fridge for about 30 minutes
Okroshka, in this recipe they use Kvass but you can do sour cream and water or Greek Yogurt and water!

    @@BerylShereshewsky a bit of advice, i have seen that many Americans hate mango so i guess there the quality of mango is not good. So you won't be able to feel that taste, if you come to india try then.

    I’d love to see a video series “How the world uses ______” for example how the world uses preserved lemon, sriracha, tahini, etc… It would be a great way to try lots of recipes without having to buy too many specialty ingredients.     Btw to make poori puff better, splash the oil over the top too. Makes it cook more evenly and so it puffs more. It also depends on the level of kneading you've done and the hydration of that specific ball of dough. Flat pooris are still tasty (come on it's spiced deep fried dough if you don't like it you're lying to yourself) so there's really no pressure! Also, definitely eat poori with potato masala, it's so tasty.

    I second that, use a ladle to pour hot oil over the top to max out the puff! But resting the dough is also important, if the gluten is too tight no puff! And practice! Enjoy!

    @@nessazee dried cherries but my uncle when he makes it he puts dried cherries, fresh green grapes,celery, sweet onions, and yellow and red bell peppers plus a little of dill and sweet relish it’s so good.

    Another dish recommendation for summers. Sattu Sharbat from Bihar, India. Sattu is a flour made from roasted gram and sorghum which is quite nutritious. The drink is the best way to refresh yourself besides protecting from the hot, dusty local winds called loo, in Northern India. The drink is simple: Mix in some sattu flour with roasted cumin, salt, some sugar(or even jaggery), black pepper and pieces of raw mango. You can also use lemon instead of mango. Some people also like to add chopped onions, which provide a lovely crunch. Though making a drink from flour seems a bit odd, it just tastes amazing no matter how weird the combinations may seem. I hope you try this drink out. 😇 (Edit: Didn't expect to get such a great response. I would be fun to try the other variations of the drink as well. And yes, sattu ka paratha with baingan bharta is a true delight. I am happy to be a part of this community which reminds all of us that food is truly an emotion. Loved reading all the comments.)

    As a Bihari I've only eaten Sattu ke Parathe and like Sattu with Rice. I didnt know that "Sattu Sharbat" is an actual thing! ✨✨

    9:22 there's a simple trick to making perfect Pooris Firstly, the dough needs to be harder than regular chapati dough. That's the key that brings in that puff. Secondly, your Pooris are too big. Usually, its half that size. Also, while rolling the dough into Pooris, make sure you just run your rolling pin on only one same side.

    also use oil to roll them vs dry flour (leaves fewer sediments in the oil). You also wanna toss it in a little more oil - needs a deeper pot of oil. another thing my mom and I do to puff the pooris more is to very slightly press on the poori surface while its puffing half way and it will push the steam to the other side and urge it to puff more

    I'm Austrian & my fall food is: "GERMKNÖDEL"! it's a big fluffy, slightly chewy boiled yeast dough dumpling filled with (sweet, usually spiced with cloves & cinnamon) plum jam and served with melted butter and a mix of poppy seeds and sugar on top! YUM

    And oh, I love fall dishes! A lot of people in Russia have small gardens outside of the city or have relatives with small gardens, so fall is usually the season you would get a LOT of homegrown vegetables like zucchini’s, pumpkins, tomatoes, potatoes and so on! I love making zucchini pancakes, bc it uses a lot of zucchini and you don’t want to let it spoil 😅 And of course vegetable soup with beet leaves, spicy stew with vegetables and dark beer, sweet pumpkin, honey and raisin rice, pumpkin soup, salty pumpkin bulgur wit fried cheese… I love fall for this diversity! 🍂

    I am from Poland and the food that is my Autumn childhood memory that I still eats is pickled cucumbers soup (In Polish- zupa ogórkowa). Polish people make by them own a lot of pickles, so Autumn is perfect time to start to use the pickles that were made during Summer as the summer is the time of harvesting the cucumbers in Poland. The soup consists of broth, grated pickles, potatoes (what can be more Eastern European that potatoes!) and heavy cream.

    Challah with apples and honey for the Jewish New Year always reminds me of fall. Challah is a universally loved bread. People have begged my husband to open a shop for his Challah, but he only does it for fun. In quarantine, he has baked it and brought it around to friends and family as a way to cheer people up and socialize while socially distanced on their front lawns.

    Apple cider donuts are one of my favorite fall foods! There's just something so comforting about holding a warm cup of cider on a chilly fall morning and eating a cake style apple cider donut. Or even better, getting them freshly made at a fall festival and sharing with friends and family as you enjoy the festivities.

    Beryl, here is how you can recognize a Michigan cherry! Michigan is famous for tart cherries! And the area around Traverse City actually produces 70% of the nation's tart cherry supply. Tart cherries are frequently used in pies, and are especially known for their juice--tart cherry juice is great for helping you sleep! And dried Michigan cherries are also more tart--and similar to cranberries, I suppose. (Edited after the fact--I love scrolling through and seeing so many West Michigan comments....def feeling homesick now!)

    @@lauren8627 Not OP, but we have quite a lot of variety. Ulster Cherries Emperor Francis, Gold, and Napoleon are a sweet variety grown here (and in the aforementioned Traverse City). While we're known for tart, sweet has more variety here. Balaton are a tart Hungarian variety that's also readily available, but a little rarer, along with the Montmorency.

    Can you pls do what ppl eat during dry season? Since there are parts of the world that only has 2 seasons (mainly southeast asian countries) so it would be a great idea to also introduce the dishes specifically eaten during that season!

    I don't think there are differences between dry season and rainy season cuisine in Indonesia, are there any? Except for way more indomie kuah during rainy season, for obvious reasons.

    One of my favourite Fall foods is Lefse, a traditional Norwegian flatbread. It’s made from mashed potatoes, flour, milk and butter. You add butter on top and fold it into a little triangle shape. It’s soft, melty and absolutely delicious. Great to make when you have all those mashed potato leftovers in Fall!

    So, I noticed that you're having a little trouble and puffing up the Puris. There is a technique that we use here in India to make sure that our Puri puffs up. When you put the Puri dough in hot oil, splash some hot oil on top of the Puri, this techniques really helps in puffing up the Puris.

    Potato leak soup is my all time favorite fall dish, the richness of the potatoes with the earthy, slightly sweet flavor of the leaks is just to die for. Followed closely by bubble and squeak, which my family technically doesn’t make the right way, but it’s still really good. Potatoes are a must for fall food.

    There is a whole festival dedicated to cherries every year in Traverse City. I have actually never been even though I'm only two hours away and have family there. Dried chocolate covered cherries from there are to die for.

    Traverse City!!! Finally someone knows that we have the best cheries. Grew up on Michigan cherries and everytime I go back there's nothing like a blue paper pint of cherries up at my favorite beach on Old Mission Peninsula

    Okroshka is a very interesting dish, I love it with my whole heart ❤️ My family usually does it with Kefir instead of sour cream and some people use kvas (or mix them, or just sour cream, or sour cream with sparkling water) It’s very versatile! Also, I think, usually you will have it with radish, cucumber, potato, ham, egg, dill and spring onions, but in every family it’s different! And Latvia have similar dish, but also with vegetable broth and beet

    I also know and make it in a similar way you described Mrpasta. Kefir is a must for me and I also add parsley. I always make a bigger batch that I keep in the fridge, it gets better after a few hours 🤤

    Ohhh, I would totally have this with beets and potatoes and eggs! I have only tasted kvas one time in my life, and it was also in a cold summer soup with cucumber and with baby greens on top. A Jewish woman that I worked with made it for me as a snack with some challah and tea when I went to her house for a visit. This was also the very first time I had seen a samovar! I thought it was the prettiest thing I’d ever seen. 🥰

    Montmorency tart cherries -- love them fresh picked, but the Ulster is a sweet variety that is fantastic (as are the Pearls). Grew up on the Western side of the state right on Lake Michigan, and that fruit ridge has the best fresh cherries. There are a ton of varietals all over, but those two are among the most common, and mostly likely to be found dried. Other than just eating them plain, putting fresh ones in any type of salad is also a very refreshing option. Blueberry into cherry into apple -- even when the weather didn't cooperate, you always knew the season/month by what fruit was the best.

    In the fall, I love roasted root veggies. SOOOOO good. Also with the start of fall means I can use my oven and LOVE backed lasagna and I make a really good vegetarian lasagna. Now I'm wanting lasagna...

    Dear Beryl, I really really hope that you know how important what you do is. There are so few places I can go online where there isn’t some sort of toxic negativity. One case of it, I can deal with but when it’s over and over again, I get really sad and to alleviate that I try to find places where I know I just won’t run in to it - your videos are one of (far too) few places I can go where all I feel is goodness, and love and warmth and it’s a place where you are bringing cultures together, and breaking down barriers all in the loveliest, subtlest way. You bring nothing but joy and happiness, and from someone who is really struggling with life right now and who can’t see much good in the world, you remind me it is there and I genuinely thank you for that.     I really hope this sounds the way I'm thinking it in spanish... this channel has made me fall in love with Indian people and their cuisine. Being from Argentina, we don't get exposed to that part of the world as much as I would like to. Every time there's an Indian host I just wanna try everything they recommend because get infected with their enthusiasm. So yeah, if I can get a Mango sometime inthe future I'll definitely try it. And if someone from Argentina knows where I can try panipuri, plese let me know.

    My grandma always made soup out of elderberries when I was younger. She hasn’t made it in quite time, but every Fall when I walk around and see elderberries I think about it. I gotta ask her to make it again maybe this year or next, it’s absolutely amazing and just so different from other soups

    Fall dish. Cabbage soup. 2 cups good broth, your favorite. I like chicken or beef, but whatever kind you want. 1 medium head cabbage cut into 1 inch square cubes, 3 potatoes cut into 1 inch cubes, 1 large carrot cut into 1/2 inch slices. 1 medium onion cut into thick slices. Salt to taste, a ton of black pepper. Enough water to bring the liquid level half way up the pile of vegetables. Serve with a slice of buttered cornbread made in a caste iron skillet. If you need the recipe for real cornbread, let me know. Put all your ingredients in a big pot, cook till everything is tender. This is a great source of vitamins that boost your immune system. So if you have a head cold, a couple bowls of this will clear that right up.

    We here in Michigan have much more than just cherries to give the world. If you like peanut butter, try St. Laurent Brothers - it’s just peanuts and salt (or just peanuts for the unsalted variety), but somehow they make it into the creamiest, smoothest, most peanutty peanut butter you’ll ever eat. And if you like fruitcake (or if you think you don’t), the monks at Jampot make fruitcakes that are best there is. Unbelievably good.

    Green chana leaves, we call them Harbhara leaves, are my favorite fall vegetable to eat. It is made with the leaves from the green chana plant. It is a simple dish and but its a dish that makes you smile and fills you with warmth. They taste earthy and have a different texture to them which is heavenly when paired with jowar roti and a spoonful of ghee (my addition). Hope you try this one, Beryl, it's from Maharashtra, India and it is that dish which everyone looks forward to during fall.

    I love making oatmeal cookies with dried cherries instead of raisins. 😋 Fall foods. Beef stew and chili. We tried Cincinnati chili and love it that way as well as just a bowl with cheese and sour cream.

    I second this! The best part of chili is you can kind of throw anything in there. My family tends to do turkey meat, corn, spinach, mushrooms, sometimes chickpeas, and other random stuff in the fridge.

    Nice video! just a little note on the Russian dish Okroshka. Okroshka does have a standard recipe, which includes boiled potatoes, hard boiled eggs, sausage, cucumbers, diced onion and radish, although you can add or remove anything you want of course, just don't forget about the fresh dill. And it is usually served with either Kvass or Keffir as a broth with a little sour cream or mayo. You can just add water and sour cream but i don't think it tastes as good and it is definitely not a "standard / traditional" thing. Cheers!

    Super-simple fall food recipe: Mashed potato, cauliflower and chorizo "Stoemp" ! "Stoemp" is a very popular dish in Belgium where I live. Stoemp always consists of mashed potato mixed with cooked vegetables and served with some kind of sausage. For this specific variety I clean the cauliflower into little "roosjes" - little subdivisions of the natural form cauliflower grows in - and cook these in salted boiling water for about 10 - 15 min. Then prepare the mashed potato (yes it can be instant ;-) ) and mix the cooked cauliflower with the mashed potato. Cut the Chorizo 100 g /pers. - I like the spicy version - into 0.5 cm slices and bake them shortly in a frying pan in some olive oil. The slices should be hot, the oil should be red-orange and the consistancy still chewy and not black and hard ;-) Mix the sausage and the oil into the potato-cauliflower mix until all of it is orange :-) Voila.. done! I like to eat it with some ketchup on the side!

    I was an exchange student in Belgium (between Antwerpen and the Netherlands) and I never heard of this. But it sounds delicious! Will def give this a try in our German fall. And it also made me really happy unexpectantly stumbling over some Vlaams words in the comments :D Guess I miss Belgium a lot :/

    In the US we eat fruit salad more in the summer. Just cut up any fruit you want and mix it together with some lemon juice and nuts, marshmallows, or granola. If you want to do a video with fall dishes in the US, you could have any soup or stew recipe, anything with squash(especially "winter squash"), any hot dessert with an apple or pumpkin flavor, or any hot drink recipe. If you want some specific ideas: roasted butternut squash, pumpkin soup, beef stew, pumpkin pie, apple pie, hot chocolate, and pumpkin spice coffee or tea.

    FALL DISHES: SOUP! Here in the Midwest (Wisconsin) we are HUGE on Chili My family also looks forward to fall because when that first leaf turns orange I am making Loaded baked potato leek soup asap 🤣 Edited to add: My husband and I also both grew up eating goulash. It's sort of like a mix between chili and spaghetti but with macaroni. I have many memories of making this with my Grammy growing up and sitting at the table with saltines eating it with her 🙂

    I love the fall! The only sad part about it is that it never feels like it stayed around long enough. In the fall, I like making Budae Jiigae, or army stew. It's salty, junky, and full of processed food, but I love it. It's a versatile dish, so every one can make it to suit their own taste preference. What I like to do is after we eat most of the items in it is to throw some rice in at the very end and let that cook into something like a junk food congee. It's not the prettiest dish but it's so savory and warm. I know it's not strictly a fall food, but it's perfect for making in a small apartment while the steam from the bubbling stew warms up the place with your loved ones.

    My dad every years as long as I can remember has made Autumn Soup. It is a thin tomato based soup with ground beef, potatoes, carrots and Rotel tomatoes for kick. The first cold snap we have here always brings out the soup.

    As a Bangladeshi, we are really lucky to have 6 seasons instead of 4 so our fall is divided into two seasons, 'Shorot' and 'Hemonto'. And Hemonto here is special for a different reason. Our farmers finally cut the ripe crops and it's a really happy time for all. We celebrate 'Nobanno' at this time which means 'New rice'. And people make different dishes and pitha. pitha can be roughly trasnlated to 'cake' but it's nothing like a cake. I'd compare it with perogies or vadas but mostly sweet and sometimes dipped in sugar syrup or milk. One of my favorite pitha is 'Dudh-khejur pitha' hailing from the south of Bangladesh. 'Dudh' means milk and 'khejur' is dates. This pitha is basically made of rice flour dough shaped kind of like one of those big plastic hair rollers (we get this pattern by pressing the dough on a banana bark? (if you can call it that) and it's deep fried. Than it is soaked in a milk and date molasses mixture and enjoyed cold. I always attack the freshly fried bunch because I don't really like milk that much.

    The cherry sarni looks great. You could use tinned morello cherries. Maybe add some chopped walnuts, too. Ryazhanka or kefir in the okroshka would be great- and healthier than smetana and water. If you have an industrial-strength juicer, slice your mangoes into thick fingers and freeze them. Run the frozen mano through your juicer. This will purée the fruit and whip it full of air making a dairy-free mango "ice cream". This also works well with pineapple.

    I think the two fall dishes I'm most looking forward to are beef stew and my mom's turkey soup. The beef stew my family makes is a little bit different than your standard, as ours is very tomato-based. The turkey soup we always have after Thanksgiving to use up the leftover turkey bones and it's amazing!

    In Poland Fall is a mushroom season. We eat a lot of dishes that include mushrooms like boletus, larch bolete, porcino, parasol mushroom but we especially LOVE chanterelles. For example we make this delicious creamy chanterelle sauce with our kopytka or plain potatoes. Of course tomatoes are big here too, especially now in September. I love our fall cuisine, so if you need any details I am happy to help 🥰

    Hey beryl !! The best way to make poori is keep putting oil from the pan on top of it while frying with the spoon this helps it cook on both sides really fast and it also makes it fluffy !! Hope this tip helps

    I live for Autumn! One of my favorite things to make once there is a chill in the air is chili with macaroni or as my family/ community call it "spaghetti red". It is a thick chili with beans served over plain spaghetti or elbow macaroni. Sounds really odd but it is so filling and warming. A nod to my Sicilian grandparents and their neighbors adopting and adapting American dishes that they were learning upon arriving here.

    Oh, the best fall food is Brunswick Stew! (Although there's debate about which Brunswick it originated in. I, obviously, will vouch for Georgia) Its a warm BBQ stew that lends itself well to that whole, empty-the-fridge kind of cooking as you can add all kinds of veggies and meat. I've also had some killer vegetarian versions!

    A BIG reason why aamras poori is a summer dish is because you get the best mangoes post peak summer. The hot dry winds (luu) make the mangoes ripey and tasty.

    Very interesting! I grew up in rural Michigan. Growing up, my parents had cherry, apple, peach, plumb and pear trees on the property. We also had a huge garden full vegetables. Chicken Salad was something I did not experience until I was an adult. I like savory/tangy flavors but did not care for grapes or raisins in my savory foods. I would like to sample cherry chicken salad sometime! I can tell you about a product that is very enjoyable that is also uses Michigan grown cherries. Cherry Wheat Beer, brewed in Marshall Michigan. Great all year!!

    Amazing video, everything looks so good honestly. There are 3 foods that I associate with fall here in Croatia. First is chestnut puree (kesten pire) topped with whipped cream, second is strudel filled with squash and fresh cheese called bučnica, and the third is štrukli, dough stuffed again with cheese usually and can be boiled or cooked, as well can either be savory or sweet. I prefer it baked and topped with sugar honestly. Hopefully you'll try it one day :D

    A type of chicken salad sandwich (or sub in tuna or chickpeas) that we commonly eat in the summer, in my family is protein of choice, mayonnaise, lemon juice, salt, pepper, lots of Thai basil, and steamed & cooled green beans. It's especially great when the green beans are in peak season during summer but can be made with frozen & steamed green beans as well. Super easy and delicious with the lemon and Thai basil (super easy to grow during the summer outdoors or in pots like regular basil) FYI, it's not a Thai dish just a twist a chicken salad sandwich

    oooooh Fall dishes!!! I'd love to send you a Dutch fall dish called "hachee" which is an incredibly yummy spiced stew, commonly eaten with another dish called "stamppot" (mashed potatoes and vegetables) or just potatoes and red beets. Hachee is made by stewing beef for a very long time, together with roughly cut onions, carrots, and herbs and spices, soaking them in broth and letting sit either overnight or during the entire day. (a slow cooker makes things easier though) I recommend adding some tart apples and cinnamon.

    If you do a soup episode (please!), I would like to submit my college roommate's recipe for Sinigang, a tamarind base soup from The Philippines. The first time I watched her make it, when she threw a handful of romaine in it, I had my reservations. But it is SO GOOD. Her mother was born and raised in The Philippines and so she grew up eating it--and now I make it when I'm feeling I need some comfort too!

    Hey Beryl, one little tip: pouring hot oil on top of the poori with the ladle helps it puff up nicely. Another summer favourite from the south of India- curd rice with pickles or mango

    OHHH, when you said "funnel cake" I thought, you should do a fair/carnival foods from around the world. That would be so cool. We always have our fair in the autumn. I wonder when other places usually host a fair and what do they eat?

    Around here (Ontario Canada), September and October are apple picking time. I suspect this would be true in many US states and maybe a few other northern hemisphere countries. Have you done an episode on apple recipes yet?
