INGREDIENTS
#1 Orange and Cinnamon Müsli Bowl
muesli of choice
½ tbsp chia or ground flax seeds
¼ tsp cinnamon
1 heaping tbsp peanut butter
chopped strawberries
orange juice
~ serves 1 ~
#2 Polenta Tofu Plate
for the polenta:
½ cup dried polenta (85g)
1 ¼ cups vegetable broth (310ml)
scrambled tofu recipe here: • Vegan Meals I Eat Ever...
a few handfuls of fresh or frozen baby spinach (to add to your tofu scramble)
cherry tomatoes
flavoured or smoked tofu
sriracha for the top
~ serves 1 ~
#3 Sweet Potato Protein Bowl
1 medium sized sweet potato, baked the night before
1 cup frozen raspberries (~130g)
2 tbsp vanilla protein powder (sub for vanilla + oats or vanilla + hemp powder)
a splash of oat milk, more if needed
Toppings: berries, peanut butter, cereal/granola
~ serves 1 ~
#4 Spinach and Avocado Oatmeal
½ cup small cut oats (45g)
1 tbsp nutritional yeast
1 cup vegetable broth
2 handfuls of baby spinach, fresh or frozen
1 tsp white wine vinegar
Toppings: avocado, cherry tomatoes, sesame seeds, hot sauce
~ serves 1 ~
#5 Thursday’s Berry Smoothie
2 bananas, frozen
1 cup frozen raspberries
½ cup frozen blueberries
1 - 2 tbsp chocolate protein powder
1 tbsp hemp powder
1 tbsp tsampa powder (sub with oats)
⅓ cup orange juice (80ml), or more if needed
#6 Healthier Pizza Toasts
whole wheat bread
pre made tomato sauce
cherry tomatoes, cut in half
vegan pizza cheese
#7 Vegan Pumpkin Chocolate Chip Muffins
250g + 1 tbsp spelt flour (2 cups + 1 tbsp)
150g sugar (¾ cup)
1/2 tsp salt
2 tsp baking powder
1 tsp cinnamon
½ tsp pumpkin pie spice, optional
2 tsp vanilla
1/2 cup + 1 tbsp non dairy milk (135ml)
1 tsp apple cider vinegar
⅓ cup + 1 tbsp (90g) pumpkin purée
1/3 cup + 2 tsp (90ml vegetable oil)
¼ cup chocolate chips (45g) + more for the top!
→ 10 - 12 muffins

#8 Tofu Polenta Bowl
1 small red onion
1 block of firm plain tofu (200g)
oil for the pan
1 ½ tbsp soy sauce
1 tsp agave syrup
1 tsp hot sauce, or more if desired
for the polenta:
½ cup polenta dried(85g)
1 ¼ cup vegetable broth (310ml)
2 handful of baby spinach, fresh or frozen
broccoli, fresh or frozen - steam or boil for a few minutes until bright green and tender
top with lemon juice, sesame seeds, extra hot sauce

My personal favourite are fresh spring rolls: rice paper, rice noodles, your choice of veggies (I go carrot, cucumber and cabbage), with cold pan fried tofu and a sauce. I also love soba noodles.

Mina, can I just tell you how much I appreciate you showing the variety of meals that vegans can eat? All too often, I get into a rut of eating the same thing all of the time. You're spreading the message that veganism is truly exciting because of all of the different things that we get to try and all of the fun food combinations that we can create. im not vegan (which would mean i have a lot more options) and i still end up eathing the same thing over and over again XD. food rut is hard to break out of, specially if you do not have the time or mental energy to plan out before doing your groceries

Try this: cut a date in the middle and put almond butter inside/on top of the date. Cacao nibs on top are good with it too!

eins meiner liebsten Rezepte aktuell: Aubergine gefüllt mit Quinoa und Tomate. Quinoa mit Wasser kochen. Aubergine aushölen und das Innere mit Tomaten, Zwiebeln, oder anderem Gemüse anbraten. Würzen. Quinoa dazu und dann damit die Aubergine füllen und dann für 30-40min in den Ofen! Vorbereitungszeit ist echt kurz und dann backt es im Ofen. Perfekt für die Klausurenphase, wenn man nicht so viel Zeit hat!

Ngl one of my favorite vegan breakfasts is vegan apple "pie". I usually like to toast oats and cinnamon until theyre crunchy, then i mix them with peanut butter. And then i slice an apple and put it in a skillet with water and cinnamon. I continuously pour in the water until the apple formed a saucy texture. I finish it off with a bit of mapple syrup and a tiny bit of lemon juice. Then i just put the apple mixture to a bowl and sprinkle the oat&peanut butter mixture on top.

Polenta!!! YES!! more should try it! We eat it often in my country :D goes REALLY well as a side with beans in tomato sauce (and pickles !) or with potatoes sauteed in the skillet! :)

Probably won’t see this, but the way you cook is soo free-handed and effortlessly creative and looks like something I would want to eat 😍 also the packaging of Vegan foods there are soo pretty, and the variety, they really care for you guys 💯 To top it off you’re like a walking ray of light you just omit this beautiful, positive energy, like you’re just glowing 😩😍

I really recommend not putting the sweet potato into the oven, but instead popping it into the microwave for about 5-10 min on its maximum level (depending on the size). It’s sooo much quicker and especially handy if you use it for blending only!!

You should try; chia seeds with almond milk and about a teaspoon of vanilla (more milk than chia seeds) and leave that in the fridge overnight, then use fresh or frozen berries and mash or blend that up by itself. After that scoop out some of the berry purree at the bottom into a glass or a bowl (would recomemd using a glass) and add your chia seed mixture on top. optianol; you could add some more fresh or frozen berries on top and then add some dried strawberries, lastly drizzle some honey on top. It’s really good😊

I haven't converted to veganism yet but removing meat and processed foods from my diet has really been good for my health. I guess you can say I'm a vegetarian. I lost my belly and about 30lbs. Lowered cholesterol to normal levels, normal blood pressure, etc. It's just a little expensive to eat healthy but it's worth it. Whole Food, Amazon Trader Joe's and Juhub are great options to find good deals but I prefer www.juhub.com though. I discovered a lot of unknown but good brands there. Seriously, eat healthy while young. Don't dealt with the drama that come when you’re older.

I had the wholemeal pizzas and looooved them! I used rye bread (I love Finnish or German rye bread), tomato puree, garlic, mixed herbs, tomatoes and the violife cheese :)
Chocolate peanut butter oatmeal recipe for anyone who wants it: cook oatmeal like normal and then add 2 tsp of cacoa and 1 tsp sugar. When the oatmeal is done cooking add 1 tbsp of peanut butter and enjoy

We call it mache in Sweden as well 😊
In aruba we make fried polenta. Which is basically u make the polenta and spread it on a sheet to rest in the fridge. Then take them out when they are cold. And cut them into big rectangle shapes and fry them in a frying pan with some oil. And then u eat it. Its deliciousss

oh everything you made looks SOOO GOOD :>> but just a suggestion, try cooking the bulgur in a turkish way someday. it really tastes good and fills you up all day. sautee some onions and green pepper, add some tomato sauce (or as we call in turkish, salça) add the bulgur and the boiling water. if you type turkish bulgur or bulgur pilavi, several recipes will show up i guess. with some tzatziki, it is complete 💜

Wow! 😯I was surprised to see you used and were able to buy tsampa. That is a traditional Tibetan food which we make at home since you can’t buy it readily in Canada anyways.

The most expensive thing about veganism are meat and cheese substitutes and you can be vegan without them 😊 Veggies and beans or all the other goods are really inexpensive if bought in a dried form instead of the can version 🤗🌱

There are a lot of options to keep you satisfied cheaper than eggs and cheese, like chickpea flour for omelettes and tofu. All sort of legumes are cheaper than eggs and dairy.

Für die Süßkartoffel kann ich nur empfehlen die mit nassem Küchenpapier umwickelt für ca 8 Minuten in die Mikwowelle zu packen. Geht super schnell 👌 Fastest way to cook a sweet potato is to wrap it with wet kitchen paper and putting it in the microwave for about 8 minutes

hi mina i doubt you'll ever see this comment but i was wondering if you've ever considered making polenta by yourself. it's really really simple and it takes about an hour but the only ingredients are cornstarch, water, olive oil and salt. if you can't find the original recipe in english or german you can tell me and i'll translate it for you from italian to english

Vegan ravioli in a can?! I am soooo jealous! I haven't seen anything like that here in Colorado. Great video. Those muffins look awesome! One way to improve the texture of your polenta is add about a tablespoon of vegan butter or olive oil. Also, maybe a little more water would help. This is something I make on the reg. I love it with refried beans, hot sauce or salsa, vegan cheese, and avocado.

feldsalat is lamb's lettuce or corn salad in English. They mainly put it in mixed salad bags where I'm from. Also love your videos, just so chill and relaxing, good meal inspiration. Ik you said its feels weird when you speak german on your channel but i rlly like it as i am trying to learn, just by showing the packaging of food items i am learning more, something they overlook when teaching in schools- like i need to know how order/buy specific stuff.
I'm Algerian and when i saw ras elhanout (it means the head of the store weirdly 😂😂😂) i was so shocked 😳😳😳. I personally don't like the store-bought one cause my auntie send us freshly made one every time but it's a must😍
