→Gyro-Style Seitan
2 cups vital wheat gluten
1/3 cup chickpea flour
1/2 block extra-firm tofu
1 cup water
1 beef-style vegan bouillon cube
2 teaspoons soy sauce
1 teaspoon soy sauce
1/4 cup nutritional yeast
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon marjoram
1 teaspoon parsley
1/2 teaspoon thyme
1 tablespoon olive oil
1 tablespoon tomato paste
Whisk together vital wheat gluten and chickpea flour.
Combine all other ingredients in a blender and process till smooth. Makes sure your liquids are room temperature or cool; hot liquid makes seitan harder to knead.
Combine wet and dry ingredients and knead until everything is well-incorporated and “dough” springs back to touch.
Shape into a long and wrap tightly with aluminum foil. Pressure cook in the instant pot, on the rack, with 1 inch of water for 30 minutes. Allow to release naturally. To make without an instant pot, steam for 1 hour, then transfer to 350 degree oven and bake for 30 minutes.
Seitan is easiest to slice if made ahead of time and allowed to cool completely. It will firm up considerably.
→ Tzatziki: You can follow any highly-rated tzatziki recipe on the internet and simply substitute in cashew cream, plain unsweetened vegan yogurt, or vegan sour cream for the Greek yogurt!
→ Pita bread
2 3/4 cups all purpose flour, divided
1 teaspoon salt
1 cup lukewarm water
1 packet active dry yeast
1 tablespoon olive oil

    "One clove of, oh, pardon me, one HEAD of garlic" - the most on brand Sarah thing to say 😂 Also - a tip from a Mediterranean girl over here, you can 'grill' the eggplant straight on the stove top, just open fire. It's a little bit messy, but less time consuming than the grill. Plus you get that smoky flavor. That's how the grandmas do it here.     Love watching you two being so happy and silly together! I grew up on “buttered noodles” and “buttered rice.” To me those were comfort foods. Still eat them that way today.

    I noticed a thing when you were making tzatziki and thought I might share: I once read an article about immigrants from Vietnam in Poland - polish people peel their vegetables towards them, while vietnamese people (asians in general maybe…?) peel away from them, so those immigrants would notice their children become more and more polish when they started peeling veggies "our" way. It's a thing that I always remember when holding a peeler and I wonder how true it is?

    I'm not usually committed enough for long format videos, but we've all got nothing but time these days, so it's nice to watch something longer than 10 min, and I really enjoyed it. I also made babaganoush this week because we had the grill out since my wife wanted to BBQ, and I definitely prefer the flame charred over oven baked when possible. Also, it's still way to cold to BBQ in Germany, but again... nothing but time. 🤷‍♀️

    Loved this video! The first time I saw you on KZread it was a ‘cook with me’ video so I got nostalgic.     Loved this one, it's so nice to see you cook these amazing things!     I made the chickwheat recipe seitan last week. It was better than I expected. I also make my own pita for when I make falafel. You can start the pita on the cast iron for maybe 30 seconds and finish it in the oven.

    Have you tried washing the flour yet? I can't remember if you have done that in another video. Anyway, I know it's an extra step but if you buy the flour in bulk I'm wondering if it would save you a few trips. Of course it's a trade off. I know you like making your own staples. That's the only reason I brought it up. I'm so happy you made this video. I've been thinking of making gyros with seitan for a long time but I haven't tried it yet.

    The seitan recipe in the description says 1 teaspoon soy sauce then 2 teaspoons soy sauce. Is one of those meant to be liquid smoke?

    I feel like since we come from similar backgrounds food wise, you’ll maybe know what I mean when I say that rice paper bacon tastes and feels like eating, disgustingly, the fatty part of fried short ribs. Please try it and let me know if this is so! Also, that garlic fried rice!! Takes me back!

    It's winter here as well and I've always put my rising dough in front of the stand alone heater I keep in my den lol the oven thing sounds way better than sitting my dough on a stool a couple feet away from my heater hahaha

    I used to always eat eggs and rice. I like my eggs soft so I would cook the rice and stir in raw eggs off the eat. The residual heat cooked them perfectly. Can’t wait to try it with my homemade, stevia-sweetened ketchup!

    Not related to this video but the yogurt reminded me of it.. I tried the kite hill plain greek yogurt the other day and it was SO BAD. I honestly almost threw it out but I hate wasting so I mixed it with a banana, maple syrup, and so much cinnamon I couldn’t taste the yogurt anymore 😅 Have you tried it?

    The edgyveg just made the rice paper bacon, it Looks decent. Also they have this new vegan bacon seasoning that would be perfect for the marinade. Ita called Deliciou's Bacon Seasoning🥓

    I super recommend trying the Mississippi Vegan tofu bacon sometime. There is a ton of oil and sodium in it but it is so freaking good and such a treat.

    Girl you must try the rice paper bacon. I saw Candace Hutchings, the edgy veg, do it a few years ago and tried it immediately. Watch one of her videos because she’s updated it several times but you will love this. It is so easy and delicious and really satisfying. Love your channel!

    I was definitely a little bit irrationally upset that you threw out that whole head of garlic over a bad clove 😂 but I've also worked on a farm and know how much of a pain garlic growing/harvesting/drying/braiding is 🙃 But I get it, when in doubt throw it out ✨

    Paragard is not hormonal, so you should be fine. I love my paragard IUD! She must’ve had a hormonal IUD, I remember her saying she was getting off of hormonal birth control

    i love the long form videos!! also as a chamorro person, i totally relate to eating fried rice for breakfast, except we always had spam in ours haha. i'm waiting for the day i find a good vegan spam substitute so i can make spam and titiyas, but i'm not so confident that's gonna happen 😂
