    Shogo, this is a tragedy. I tried buying some knives from Yoshisada-san's store but they do not ship overseas (you need to enter a prefecture at check-out). Can this be fixed or is there a company that would ship from them to UK?

    11500¥ Is very reasonable as that about £70 15950¥ is about £95 to £100. For the pattern & such the price is fair but I'd pick the other one. Don't know how he manages those prices as a knife is around 1/4 & 1/2Ib in weight on average so about 5-6 blades per kilo of steel. A plain carbon 1KG billet is about £10 for machining stock be it round or square. Add the fuel cost & any electricity for tooling then I don't now how the fella turns a profit after tax. Mind i don't now what the Japanese price for coal or electricity is like compared to Britain but I also assume the tax & overheads is less. Still can't see how the old lad turns a profit.

    @@sarahpayne4099 Most Japanese blacksmiths don't sell directly to customers overseas/outside of Japan. They have agents that select vendors worldwide to sell their knives outside in Japan. These are reputable sellers in Australia: Knives and Stones - Australia Migoto Cutlery - Australia Pro tooling - Australia Zanvak - Australia (sharpening supplies)

    I teared up a little when he gave you the knives as a gift. That's so kind! When I was in culinary school, a lot of students wanted German knives. However, there was a small percentage of us - myself included - that felt just as strongly about Japanese knives.

    I was just as surprised as you were Shogo that they gave you the two sets of knives. It was so kind of them to give Tomoko one and your wife one as well. I’m definitely going to buy something from their online shop.     Thinking the same. I already know various people who will receive authentic Japanese kitchen knives for gifts purchased from true artisans in Kyoto and shipped to USA. The knives are worth it and the gift is a classy way to say to the recipient that, "You are worth it," or in other words you are loved and you warrant a special gift like this.     I am in love with that shop. The pattern wielded designs and the skills on display is so clearly superior in quality. Even the salesmen was great. Don’t let his smiling eyes fool you that is a real business man as hard core and capable as that knives were great.

    Most of my friends who are work as chef mostly always hunt for kitchen knives when they went to Japan. I'm not on to it but i guess the sharpness and quality of Japanese kitchen knives is really the best one .

    Actually Zwilling J.A. Henckels is also selling Japanese knives since the company bought Miyabi back in 2004. The Miyabi knives are still produced in Seki, about 60 km Northeast of Kyoto, Zwilling knives are made in Solingen. Thinking about the "trend", it is always funny when east asian business people or tourists are buying WMF cookware, Wüsthof knives or Zwilling knives in Germany while the Germans are buying Japanese knives.

    I'm so glad this shop has an online presence! Now I know where to buy more kitchen knives to replace the old cheap ones I've had to use since in the past I was too poor to afford nice knives like this. Like, seriously, I have handfuls of dollar store paring knives that I've slowly been replacing as my budget has improved, and I really look forward to stocking quality like this. I hope this shop does very well in the future, they look so impressive and beautiful.

    It's amazing to see inside the Yoshisada Knife Shop and rarely see sharp kitchen knifes. I've actually been there before in Kyoto and my experience in seeing these sharp kitchen knives is truly great and astonishing as well. They are very useful for cutting vegetables especially bamboo!

    Japanese iron sand contains vanadium. Folding causes the vanadium to diffuse finely, giving the steel grains a finer metallic structure. Due to the effect of vanadium, the blade can have excellent hardness, abrasion resistance, corrosion resistance, and toughness, and it becomes beautiful when sharpened. When a craftsman hits steel with a hammer, excess carbon is emitted along with sparks, and the appropriate carbon for kitchen knives is adjusted to 0.1% to 0.3%. Vanadium has been detected in ironware from Japanese ruins in the 3rd century.Japan used iron ore before the 3rd century, but iron sand after the 3rd century. Hitachi metals analyzed the Japanese steelmaking method and developed Yasugi Specialty Steel. Yasugi Specialty Steel is used in various applications such as cutlery steel, materials for high-end kitchen knives made in Japan, materials for razors, materials for automobile parts, automobile engine parts, and aircraft engine parts.

    Here in Europe, Japanese cooking knife is basically a "Brand" they are put in a nice wooden box or even have their own "scabbard". Cost a bit expensive and mostly used as a gift. Just like how valuable katana used to be given. As a gift. Although professional chef do use them for cooking and would maintain it regularly

    Excellent video! I like to find old 1970s Japanese kitchen knives in thrift stores - for 1.50 USD or so, you can get some nice knives. (They will need a *lot* of work to re-sharpen, but worth the effort compared to most modern knives.) One minor correction -- single or double *edge* refers to the number of cutting surfaces - the edge itself, is single *bevel* or double *bevel.* A katana is historically, single edge, single bevel. The "vegetable knives" are single edge - *double* bevel, for easier (safer), more uniform cutting.

    Very cool. I love knives and i have a nice collection. My favourite one is a wakizashi style that I use for hunting. I feel that it would be such an honour to own one of these knives! The coolest part is the aesthetic that goes into these, like how they make different patterns depending on the season.
