When you're losing, go on the attack. A long game is disadvantageous as heck when you're down material. An attack has the potential to close down a game fairly quickly before you get steamrolled. PS: Typing this before the moment you're talking about. Will probably edit if I get there.

With best play, it was the way to survive the longest most probably. Stockfish won't chose a move that can lead to it losing faster, even if from a human perspective it seem like the move gives you more winning chances. It thought "if I play like this, I Can probably force the rooks and queens trade, leading to this very long endgame, so it's the way to survive the longest" While we thought "nooo you won't be able to win if you accept all those trades while down material" Stockfish simply doesn't think the same way, it's not going for traps for the sake of a trap, not going for a sacrifice if there is a refutation (even if it's hard to find) and if it evaluates the position as less losing after a piece trade, it will play it regardless of the fact that it ruins it's only winning chances because it's just coded like that. Attacking here was forcing some reactions, some piece trades, meaning attacking was effectively causing the game to last longer (making it a kind of defensive manoeuver)

Well, lasting 20 moves against stockfish is possible if you play the most non confrontational moves possible and lock the position, then it will take stockfish some time to figure out a way to break your pawn structure. But once the board opens up, no human stands a chance.
