I'm also diabetic (type 2, and my blood sugar level is not high, hence I'm not on medication). There are two further recipes for kohlrabi dishes which may interest you: 1/ cubed, sautéed kohlrabi in cream sauce, with dill (delicious!); and 2/ raw kohlrabi, grated, as a salad - either with yoghurt and dill, or with olive oil and any green herb of your choice (though parsley is probably best). These two lovely dishes are common in Moravia (Mähren), a part of the Czech Republic, where I come from (though I now live in London). I have also heard of 3/ cubed kohlrabi, sautéed in olive oil and a splash of white wine. I believe this is an Italian recipe, and have yet to try it. Bon appétit!

I love kohlrabi grew up on it from my German mother and Hungarian grandmother. My favorite is cut up and boiled with a delicate cream sauce with lots of nutmeg! Will definitely try these.

Früher gab es auch noch Felder mit Futterkohl, den gibt es heute garnicht mehr. Schmeckte ähnlich wie Kohlrabi und wurde frisch vom Feld verputzt.

The first time I had Kohlrabi, it was fresh out of a friend's garden. Peeled, sliced thin, eaten raw with a sprinkle of salt. I've had it many ways since, but my best memory is the pure pleasure of that simple, unadorned treat.

kohlrabi is very simple to enjoy: i slice it as thick as she’s,then soak with apple cider,water.and sugar,put in the fridge,it lasted well if you boiled water.its delicious as a condiment.easy and cheap.

Seit 18 Jahren bin ich Vegetarierin und freue mich über Rezepte mit viel Gemüse wie diese hier. In den letzten Tagen ist es hier recht kühl und regnerisch bei uns in Deutschland, daher werde ich als erstes Rezept die cremige Suppe mit den knusprigen Roggenbrot-Croutons ausprobieren, die Kohlrabi dafür habe ich in meinem Hochbeet. Kohlrabi habe ich bei Mutti als Eintopf mit Ragoufleisch gegessen. Kenne auch Gemüse mit italiänischer Panade., Kohlrabi gefüllt mir Reis und Hack aus dem Ofen. Suppen daraus sind auch toll! Die Blätter eignen sich für Füllungen, nicht wegschmeissen, sehr gesund!!😊🥘🥄
