jickC8 tbh they probably just freeze dry the actual product and break it down into powdered form. Heston Blumenthal did the same thing with Indian dishes when he wanted to make a specific seasoning for his naan bread.

It is just powder getting mixed. No freezedrying or fancy stuff, it would obviously be too expensive.

The "culinary gold standard" is a clever tactical framing that distracts from how many concentrated powdered flavorants are used to make the actual chips.
This is an 8 minute interview with a guy making fried chicken. It was interesting but I think based on the title everyone came to see how the meal became the powder, not just that PepsiCo can afford to make really good fried chicken.

I don't think you understand what "help" means
Based from my Experience working in a Snack Industry. The real powder comes a long way from "fresh food" For example if you want barbecue powder, you research on the actual barbecue, what you can taste from it ie: Tomato, Sugar, Paprika, Acid,etc. You can actually mix in based on what you tasted. For example, I would add Tomato Powder, Fine caster Sugar, Paprika Powder, Citric Acid, and so on. We don't actually use Real Fresh Product and grind it to paste, we substitute until it tastes similar, not the same but similar. CMIIW but I have experience in this field.

what i think - he said lasers are pointed and they capture the flavour profile using computers to figure out what compounds build the dish, then that data is given to a team that would try and replicate that data by coming up with a dressing for the chip using various powders and oils that are essentially just concentrated versions of those compounds mixed together to the right amount to get the taste exactly the same.

Upset that we didn’t get to see how the flavor is pulverized and then added in to the chips...this was enjoyable anyway.

I went to culinary academy. I specialized in baking because I didn’t want to work in the high pressure/sociopathic ego environment of a restaurant. But I love doing savoury foods as well as sweet, so this sounds like the perfect job for me. Wide range of flavours, need an educated palate, slowed down and toned down.
My mom's family is Greek and the typical spices that seasoned our food included garlic oregano basil thyme parsley Bay and dill. All of the others that were mentioned are typical middle Eastern spices and not usually associated with Mediterranean dishes.
This was interesting. I'm sad that I can't find barbecue walkers (lays) crisps in the uk anymore :(

I find it strange that this process have not been showcased on tv sets where the chips are sold since the 80s at least, everyone must know this to appreciate the taste, now people think they just throw a bunch of taste in the bag with no respect for the customers just an intent to screw him of hes money

A lot of you are complaining that we didn't get to see the chips being made but wouldn't it be super boring seeing people throw powder on a chip?

If I had known this was a career, I might have gone to culinary school. There are actually jobs where you can be a chef without running a restaurant kitchen.
Here I thought they'd actually show is how they make the seasonings. Probably wanna keep that all a secret since its no where near the process we just watched

I wanted to create a peanut sate flavored chip because my dog told me to do it, but they rejected it because I wanted to call it "Chu Toi."

I don't think the meal becomes powder ..it will not be economically viable , I think it is made to get the taste what the customer wants ,then the seasoning guy taste it and make a seasoning related to this taste

I was really hoping to hear more about the seasoning team's work. The research chef part is cool, but it's pretty disconnected from the way they make the chips.
