what causes flex in a wheel? Notably under load such as while sprinting or climbing out of the saddle.

Sorry for the slow reply Jonathan! This is definitely a complicated topic and would make a great video on it's own. Basically flex is coming from two things: you rocking the bike side-to-side when you sprint, and you 'winding up' the hub and spokes as you apply power. Because the direction of the forces you're applying aren't the same as the direction the bike is travelling the frame, fork, wheels, cranks, stem, bar are all flexing due to this.
