Waiting tables is an art! To be good at it you need knowledge and experience! In this restaurant training video you can follow me while I am working my station and talking to guests and coworkers in real situations, uncut! The best way to learn the job is to follow someone who has been in the business for a long time and who is striving to provide excellent service for his guests! Mind you, there are a lot of experienced waiters who don't give a penny about their guests and about the level of service they provide! You cannot learn nothing good from those people, better do it yourself!

    I really enjoy to watch your videos,I learned good things from you which I put in my daily waiter job.     I've only listened to parts of your video, especially since a lot of it is in a language I don't understand. You may already be doing this, but I found that an elegant and unobtrusive way to ask if a plate can be cleared is by simply asking "May I?" If it looks like the guests are better off not being verbally interrupted, I'll just extend my hand palm-up and hover over the plate which is a non-verbal gesture equivalent to "May I?" I've learned from experience that it's almost always better to ask--whether verbally or non-verbally--than to assume (the exception is if the guest obviously wants his/her plate and silverware cleared, e.g. pushed to the side of a table).

You cannot learn nothing good from those people, better do it yourself!" Amen! You couldn't have said it better! Experience doesn't mean anything if the server never learns from it. Furthermore, even a highly skilled server can be a bad teacher because teaching is a totally different skill!

    Good afternoon, sir. Once I became more interested in waitressing and started watching your videos in order to gain more knowledge. I started watching all your videos in a row. I really admire you for working hard and finding the time and energy to train others around the world with these videos. Few people would think of such things. What surprised me the most was that I heard that you are from Bulgaria. Is this true?

    Hey Ned! Long time, no chat! If you recall, I had a server job for a month at a new restaurant but quit because I was making more money backwaiting. Well, that restaurant I was backwaiting at is now going to start training me to be a server. I could have started earlier but was hesitant as I was trying to find a restaurant that didn't require much, if any, wine and beverage knowledge for servers, but after learning the hard way that those types of restaurants won't make much money, I've finally decided to start serving at my current restaurant. I have a lot to learn about wine and beverages, but I can do that on my own. But I'm going to get trained how to expo (I'm guessing this is part of my server training as learning to how expo also means learning how long each dish takes to cook so as a server, I know when to fire each course to minimize guests waiting between courses). Any advice for expediting?

    Hi Tim, congratulation on the promotion! Good things happen to good people! Expo is very important for couple of reasons: -as you said you learn timing -you learn the dishes and the ingreadients -you get to work close with the cooks and get to know them personally -you learn to quality check the dishes, sometimes the cooks are so over their heads, they don't care how the dish looks and so Do I have advise? make sure you are polite to the cooks. read carefully the tickets and pay attention to modifiers. It is nothing so complicated, every restaurant has its own system but they will explain it to you Good luck man! You've got nothing to worry about!

    I implemented this today and it went great !! Made over 20% in tips ! I did notice that I was in my head a bit and going a little fast. Any tips for these two issues ? Thanks !

    Hi, if I want to pursue my future career as a waiter in a Michelin Star restaurant, where should I start or what is your recommendation/ guidance for a start up?

    I am not so sure how to answer this question but it is very good one! You have to start from the bottom just like every new waiter! You have to learn a lot about gourmet food and service. You will then try to land a job in a fine dining restaurant that is something close ot michelin style restaurant! From there you might have to star looking for a job as a back up waiter or even busboy or food runner in a micheline restaurant! That will bring you back but ultimately will give you the chance to work and grow in a michelin star! Once you get this experience you will forever stay in the michelin ranked restaurants because they are stilling waiters from one another like crazy! There is no sure path! But if you want to work at this level and you are not lazy to work hard and learn hard , you will make it!

    Hi Ruth, the service is the same! We just need to be extra careful and follow the hygiene rules striclty! No hands shaking with guests, stay as far as possible when communicating with them!

    Arindam, this is american service, Europe style. The food is served from the right. In America is served from the left with left hand. other than that everything is almost the same!

    Razzak it is part of the process :) we all break something or spill something! One of the girls in the video spilled an Aperol Cocktail all over the guest the other day and she cried a lot but she got over it and kept working, till she did it again onthe next day :) :) Now she doesn't want to serve Aperol to noone :) She will get over it too, she is actually very good for a 16 years old!

    Well Eti, I would say one of 50 is a pretty good stat :) I tried to use my young coworkers and plus it is one thing talking in front of the camera and acting and totally different thing a real service! So I wanted to record me actually interacting with the guests...unfortunately in German :) Anyway, thank you for being honest :)
