Vegetarian Koofteh Persian Style with Chef Hoss Zare! كفتة النباتي

Blanche met world renowned Chef Hoss Zare of San Francisco's landmark restaurant, Fly Trap. He shares a super easy vegetarian recipe for Koofteh, which is traditionally made with meat.
Ingredients for Kofta:
3/4 cup soaked bulgur wheat
3/4 cup black beans soaked overnight (or canned)
3/4 cup kidney beans soaked overnight (or canned)
1 tbs za'atar
1 tsp cumin
1 egg
1/3 cup panko crumbs
salt and pepper to taste
For sauce:
Roast at 425 for 15 minutes:
3 tomatoes
1/2 onion
10 cloves garlic
handful of cilantro
all mixed with 2 tbs olive oil and salt and pepper to taste
Puree sauce ingredients into food processor

    BlancheTV I’m going to start with lentils and rice. Mujadarrah. I’ve had it in a restaurant before and it was so good! I’m as American as apple pie but I love middle eastern food. Thanks for the videos! I really enjoy them!

    Is there a gluten free grain that you know of? You can probably use any that agree with you.

    Parsley mint, cumin, and za'atar (thyme spice mix) The chickpeas are already cooked out of a can. And bulgar is a wheat, that you soak in water: www.recipetips.com/kitchen-tips/t--1361/cooking-bulgur-wheat.asp

    Yes they are --if you are a lacto-ovo vegetarian. ;) Now is it vegan? No, but if you want to make it vegan you can use a flax "egg" of 1 tbsp flaxseed meal and 2 1/2 tbsp water :D

    Azeri isn't etnicity. İt's Russian lullaby. Azerbaycan is Turkish. Azeris ARE ALSO TURKISH. We all came from Middle asia. What' s the problem? WE ARE NOT ARAB. We all one.

    lanemoje87 Are you kidding?? Iran is a huge country represented by so many different ethnicities. Azeris are but just ONE. There are Iranian Azeris as there are Iranian Turks and Iranian Armenians for example. They have been living in Iran and part of Iran for thousands and thousands of years. Furthermore, Azerbaijan was a part of Iran prior to the Russian wars! Note: The territory of what is now called the Republic of Azerbaijan was only separated from Iran in the first half of the 19th century, through the Russo-Persian Wars. In the area to the North of the river Aras, the territory of the contemporary Republic of Azerbaijan was Iranian territory until it was occupied by Russia.
