Vegetarian Ghormeh Sabzi Recipe (Plant-Based Persian Cooking) 😁

Vegetarian Ghormeh Sabzi
Ingredients:
Serving 4-6
1 cup dried red kidney beans or pinto beans, soaked over night (I used 1 can of cooked dark red kidney beans)
10 oz baby bella mushrooms or large portabella, trimmed and cut into chunks or sliced (or tempeh)
1 large onion, finely chopped
3 cups chopped fresh parsley
3 cups chopped leeks, or scallions or chives (tareh)
1 cup chopped fresh cilantro
1 cup chopped fresh fenugreek or a tablespoon dried
4-5 limoo amani (dried limes) *Add more or less to taste but I love dried limes so extra works for me!!
1 teaspoon turmeric
Salt and pepper to taste
Juice of a lime (or two lol)
Vegetable oil/olive oil (I used 2 tablespoons grape seed oil)
Water

    You're a God-send. I LOVE LOVE LOVE Persian food and was practically raised on it. I'm Colombian but my aunt married into Persian family and my bestie from high school is Persian. I even had Persian food at my wedding many moons ago. I am also going no oil vegan and thrilled I saw this video because Ghormeh Sabzi is one of my favorites. So happy to know just about any meat based Persian dish can be veganized!! I will definitely come back for more recipes.

    I am WFPB for five years now and I'm happy that I came across your recipe. It never crossed my mind to use tempeh in the ghormeh sabzi. I usually just add more beans. I agree with you, the Persian food is so delicious and filling especially with the rice and salade Shirazi and other side dishes. Thanks for sharing your recipe and keep up the good work!

    Hey, when using the dried packaged iranian herbs (fenugreek, parsley and leek), do I still need to add fresh herbs? If yes, which ones? Cilantro?

    Hi! Great question. I have made this recipe with fresh or frozen or dried. When using dried herbs, it is not necessary to add fresh herbs as well but of course, if you happen to have cilantro and other herbs on hand, you can definitely add it. Your stew will come out great either way. In my experience, getting all the herbs fresh and doing all those steps ends up with the best tasting ghormeh sabzi but I have made it with frozen herbs and dried herbs and still had delicious results! Experiment with what you have and see how you like it! I hope you love it!! 😊

    Hi, there is no tomato paste in traditional ghormeh sabzi. Of course, you can add whatever your heart desires to any recipe when you are in your kitchen. 😊
