* HUGE TIP: You can cut the process in less than half the time by NOT using jackfruit in brine! Instead use jackfruit in water that just needs a good rinsing and break it up. (seeds an all! Today I have some Jackfruit “Chicken” Style Enchiladas with a homemade red sauce! Yuuum.
This dish is insanely good & will have you so happy when you see how simple & easy it is to veganize MEXICAN FOOD!
I also will be showing you a queso fresco recipe.. There is a lot of recipes out there & they are all borderline similar considering the fact that queso fresco is such a subtle flavor, so the recipe I used to today is the one I find works best & is super easy.

Ingredients used:
Queso Fresco:
8 oz Slivered Almonds
Juice of 1 Lime
1 Cup Cold Water
1 Tbsp Salt
1 1/2 Cup Cold Water
1 1/2 Tbsp Cornstarch
2 Tbsp Agar Agar Powder
(updated a tad because using a high speed blender really purees the almonds, so I adjusted to 1/2 tbsp more agar agar to firm up better, for referance, I used a ninja blender in this video & now use a vitamix blender)

(Double the recipe as needed)
Red Enchilada Sauce:
8 Dried New Mexico Chilies
1/3 Onion
3 Garlic Cloves
2 Tomatoes
1-2 Dried Chili de Arbol
Sourcream:

Vegan Broth
Salt
Pepper
Garlic Salt
*Optional and recommended, add nutritional yeast to taste or sprinkle some vegan cheese!
Toppings:

    tip: leave the almond mixture in the blender and then make the agar mixture and just blend it in by drizzling into the almond slurry.

    I made these today. So good, I used mesquite and hickory liquid smoke and Lee and parens Worcestershire sauce to flavor the jackfruit. I did make that make the fresco cheese but couldn’t wait it was too good! Thank you, I would have never ventured to make these. I will make them again!

    Cindy Martinez Yes girl. I haven’t personally done it with this recipe BUT if you do so, you’ll need to use 2 tablespoons for every 1 tablespoon of cornstarch! So go for it 🙌🏽 I’m sure it’ll be no problem 🌱

    You should try this with a plant fiber. It's similar to tvp where you have to hydrate it but it saves you 2 hours in the kitchen and it looks damn good. I'm trying to make a good recipe for arrepas

    Yes, funny enough I thought you can only do can jackfruit but I’ve recently seen that the jackfruit can be utilized as meat but not the sweet fruit part. Like the rind almost??? I will have to experiment!

    You will have to use tender jackfruit which is not sweet and yellow yet, that is the one that is canned and sold and used as meat substitute by vegans. They are usually smaller in size

    skippy Since the jackfruit has been boiled & is super soft I recommend cooking with the spices until desired texture 💓 I like mine a little brown & crisp!

    Girl my cheese came out creamy 😭 any idea why? I didn’t have tablespoon measurements so I just eyeballed & I did use tapioca starch to replace the cornflour so that could be why

    I prefer Jackfruit packed in water rather than brine. The jackfruit packed in brine to me smells and tastes odd. Almost like formadehyde and its so time consuming getting rid of the very odd taste.

    So I followed ur recipe and I substituted the agar agar with xanthan gum but it didn’t work. I left it overnight and it’s still very watery

    I use corrington vegan chicken powder! I’ve purchased it on Amazon & in person, Nobhill or Walmart :) I also love better than bouillon vegan chicken base, it’s more of a paste that you make into broth but it’s more rare so they have a vegetable one which is just as great! It can be found at nearly all stores by the veg stock 💓

    Yes 🥰 as long as it’s not jackfruit in syrup! If its in water it might not need the boiling method as much! Because its not brine-y!

    I just boiled jackfruit for 30 mins and it turned a purple-ish color. Any tips?

    I now recommend the Native Forest jackfruit! It can be used straight from the can, no boiling❤️

    Question why you gotta rinse after an hour and boil again why can’t I just boil 3 hours straight?..

    Since I use jackfruit in brine & the goal is to make it as tender & neutral tasting as possible, I rerinse because the first hour extracts a lot of that sour brine! The water even becomes a dullish pink tone. (After the first hour) The second one is to tenderize. So the jackfruit absorbs all that new flavor ❤️ I hope this makes sense!

    Queso fresco has a different cheese flavor, more like a ricotta ish vibe. This recipe is mimicking traditional queso fresco! Pretty plain, salty & a tiny bit tart. This recipe doesn’t require nutritional yeast because it adds to much of an unami-strong cheese taste that works better in other cheeses! But nutritional yeast is great in other recipes 💕💕😊

    No I totally feel you on that!! haha I’m so used to vegan cheeses & flavors I picked up on that I totally have to get my omnivore family to taste test for authenticity 🤣

    Can I use cashews instead of almonds? Most almonds are toxic and are not good for the environment because they waste so much water. One of the reasons California is in drought because almonds are made here. Unfortunately..
