The perfect pot is my favorite of their cookware because it can withstand higher temps.I also like how big it is and that it's pretty enough to serve from at the table (which I do allll the time lol) And I'm so glad you liked the little bit of culinary history I added in this video! ribollita is a recipe common in truly every single household here in italy. it is easy on the stomach, great for summer or winter, and can be extended for a very long time. it is something i make almost every week, but i make huge amounts of it when i know i’m going to be very busy. i can literally eat it three times a day haha. i love cabbage

This is one of my favorite soups that my grandma used to make! My grandparents would always tell us about peasant meals in Italy. They were always the best meals!

I made a ribollita for the first time last fall by literally re-boiling leftover minestrone/vegetable soup with toasted bread. It was so thick you could eat it with a fork! 🍴 And my philosophy is every season is soup season if you have AC :) 🍜🌺🌞🍂❄

I really like the “nothing goes to waste” approach, so I have a question. Is there a way to use kale stems for food?
For your potato nachos what seasoning do you use and what temperature do you cook them at?
This looks delicious. I would definitely try it in the fall/winter days. But can I remove the bread from the soup? Or replace it with potatoes or something else? I hate wet bread.

Hey! Yeah just leave it out! The soup will still be a little bit thick from the mashed beans so you can make this without the bread too! Hope you enjoy 😊😊
Oh my, that's another winner 😍 Love your recipes; they always look so cozy, colorful & yummy!😋 Just a little tip re the olive oil: You shouldn't heat it up that high (not more than 338-356°F), otherwise it starts to form toxins (you can look it up).

Hey! I used to think that too but the olive oil I use says it can be heated to over 450 degrees without degrading. I've looked into it and it seems that a lot of olive oils marked alive oil are actually not pure olive oil, they have a less expensive stabilizer oil in them to increase profits for the the company, and those can sometimes have lower smoke points but pure olive oil like the one I used says it's ok 🤗 If you want to use a different oil though, avocado oil or refined coconut oil would be a great alternative! Either way I hope you love this recipe! It's truly o cozy and fun to make so I hope you enjoy 😊😊 Happy Sunday!

@@NikkiVegan Interesting; I'll look into it! I can only speak for the oils that I use and they are 100% pure and contain what's on the label (it even says on the label how high you can heat it up to).

Thanks for sharing this recipe & video Nicole. Is there a alternative to the vegan sausage because I prefer not to eat vegan sausage because I am trying to avoid oil because it is causing skin problems and most vegan meats contain oil. Love 🥰 the video and love 💕Nicole.

It’s an extra step, but have you tried making your own so you can control the ingredients? I believe there are many variations online some may use seitan or vital wheat gluten but they’re fairly easy to make I believe.

This looks absolutely delicious. I can not have bread though... I do however, keep potato flakesbon hand. Do you think a ½ cup of potato flakes would have a similar effect?

Does anyone else try to stretch their greens as opposed to packing/shrinking them down?
Sounds good except for the "meat". Never liked meat, esp sausage. Plenty of flavor without it.
