My goal at THEE BURGER DUDE is to show vegans and non-vegans alike how easy it is to make delicious and decadent vegan meals. I used to eat a lot of meat and dairy before going vegan, so this channel is aimed at people like myself before going vegan. Additionally, I totally welcome any vegans who might be missing one of their favorite fast food or comfort food meals as well, come on in! I want to show that you can still have burgers, mac n' cheese, fried chick’n and any other kind of comfort food, and that it’s possible with plant-based ingredients.

I made this tonight. I used to love the Cheesy Fiesta Potatoes from taco bell before I went vegan. This was so close to the actual thing from taco bell. I made the potatoes in my air fryer to cut down on fat and it was still incredible. I make the burrito too and the whole family liked it. 10/10

Suggestion for next time you do these - frying the potatoes using a vinegar dredge will help them get crispier and zippier. You would just want to parboil the potatoes first, then mix your same dry dredge together with enough white vinegar to create a buttermilk-like consistency and fry until golden. The vinegar retards browning to keep them from getting black before you get this really crispy incredible texture. Side benefit: they stay crispy even when you drown them in sauce. Or don’t do that and keep doing what you’re doing. Yours looks amazing, like all your recipes do. (Edited for a typo wherein “you” autocorrected to “tofu” which I personally am delighted by)

My sodium citrate came today so I made the cheese sauce. Amazing! 😋 I’m still shocked at the magic that made it stretchy and sticky like dairy cheese! Even washing my pan and utensils reminded me of what it used to be like cleaning up after making cheese sauce. 😮😊

I used to work at Taco Bell for years and I've also been making my own version of the potatoes at home (I make a big batch and then freeze them and pop them into the air fryer to make it super convenient for me! I can't really eat deep fried foods much anymore due to a stomach problem) and your spice blend has all the same ingredients I've been using myself :) So former employee-approved. I'm definitely going to be trying this jalapeno sauce recipe because I've never been able to replicate it to my own satisfaction, but that taco does actually use the chipotle sauce.

Hey just an FYI - I noticed that the recipe on your website says to use 1/4 cup of brine in the beef whereas the video just uses two tablespoons. I made it with the 1/4 cup and it was way too salty. Anyone who decides to make this be aware of this discrepancy, and use the less-brine version! Your food is wonderful and I bought your book, can’t wait to get it!

I havn't found the ingredients for the cheese sauce yet but there's a cashew queso dip at the grocery store and it doesn't look the same but I've found heating some up to be just as good.

Any sort of vegan mince should work if you have that available. You can also use crumbled TVP too!

I saw a promising recipe the other day (haven’t tried yet, but will) where the mince was made from cauliflower and walnuts pulsed in a food processor. After the seasonings were added, it looked exactly like taco meat. It was heated just till hot (but not cooked).
