Just like the double berry ice cream I shared with you a few months ago, this vegan vanilla ice cream is intensely creamy. With a deep vanilla bean aroma flavor, It has just a hint of coconut you’d only pick out if you knew you were looking for it.
If you don’t do dairy like me, you may be looking for vegan cool treats to eat in the summer. Fortunately, grocery stores now carry a plethora of delicious non-dairy frozen desserts using various plant-based milks. But ever since I purchased my ice cream machine, I’ve been churning my own and the flavor possibilities are endless.
The inspiration for this vegan vanilla ice cream came from Luna & Larry’s Coconut Bliss. The texture and flavor of Coconut Bliss is largely indistinguishable from premium ice cream. It’s smooth, creamy, decadent, and so satisfying.

I don't know about other places, but in Italy I found cashews quite rare and very expensive (and macadamia nuts even more) 😕 Same for the sweeteners, so I use mainly raisin or unsweetened dates. Thank you anyway for your recipes!

Blue Meadow Blue Meadow Could you kindly explain what do you mean in telling "unsweetened dates" ? I thought that dates are sweet from their nature and can't be sweetened additionally... Thank you!

Evgenia Vorobets Hi! There are dates that are kept natural and others which have glucose syrup on them. Maybe I used the wrong terms, but I meant in short that I prefer to use the natural dates, without additionals :-)

Thank you so much for the feedback, Russel! I don't have a recipe yet, but if I was developing one, I would probably start with the vanilla ice cream base, but decrease the amount of vanilla, add some cacao (or cocoa) powder, increase the amount of sweetener (since cocoa will introduce bitterness), and perhaps even add melted dark chocolate (I have a recipe for dark tempered chocolate here: nutritionrefined.com/raw-chocolate-bark/)

The Ice cream Base Recipe that works for me 1/2 cup cashews 2 cups water 1/4 cup sugar(it's a little less sweet, can add more according to taste) 1/4 cup wheat flour 1. Grind cashews adding water little by little. 2. Transfer the cashew milk(keep 1/2 cup milk aside seperately add the rest) to a thick bottom pan and let it boil and thicken a bit 3. In the mean time add 1/4 cup wheat flour and the seperately kept half cup milk together and whisk till smooth lump free paste is made. 4. Add this wheat mixture in the pan and stir continuously to thicken it further 5. Add sugar and let it melt 6. After that switch off the stove and let it cool, it will thicken when cooled 7. After its cool add to mixie and blend till smooth and freeze for 2 hours in an air tight container. 8. Remove from freezer and blend again with any flavouring of choice and freeze again for about 8 hours, but make sure to add a plastic cover in between the lid and container to avoid it from becoming Icy. Yield:- About 1 Ltr

About your ice cream, Petra! What I have to say... I have no words! Believe me or not I always wanted to make my own healthy ice cream and exactlt as I want, with fresh ingredients, without sugar etc! You helped me and my dream eventually came true!!!!! I made the ice cream exactly as you said but I made it with other flavours: with coffee flavour and with pistachio! Petra, the result was amazing, tasty, so nice, so yummy, so delicious, so healthy!!!!! Also I have no ice cream maker yet! I stirred the ice cream every 30-40 minutes with my hand mixer! Thank you so, so, so much for your recipes!!!

Thank you for sharing! :-) coconut bliss is super good! I did feel that their vanilla lacked the comforting simplicity in the flavour of cow dairy vanilla ice cream, to where their coconut flavour filled that space in my world, but i've been eatting vanilla beans lately and craving vanilla ice cream, so this is super good to see! :-) A little bit of cashew. 10/4.

Petra I have another question can the ice cream be put into a glass loaf pan with the snap lock lid? The reason I ask is that I saw one of the comments about glass containers in the freezer.

Such peaceful videos, I’m making this I have everything in the kitchen. Have you tried using the can opener on the top vs the side? It’s life changing! Top comes off completely with no problem and more cleanly 👌🏽💞

Hello Petra finally I have had a moment to myself and decided to make your yummy sounding ice creme...it tasted great sweet and flavorful but the coconut creme made clumps in the ice creme maker by the time it was compleate..how can I avoid that next time..seems I am the only one who has had that issue...thanks for sharing..

Great video as always. @myfellowviewers, would any of you recommend this Cuisinart Ice Cream maker for light commercial activity? Say 10-15 quarts daily. If not any recommendations? I'd prefer this advice based on personal use of ice cream maker in question. Thank you.

@Plz gimme 40 subs Yes! Cashews cost a FORTUNE! Vanilla beans cost even more of a fortune!! Maples syrup isn’t cheap either. And ofc i e cream makers aren’t cheap either, but at least you can use them more than once lol.

@@anti-ethniccleansing465 I buy my 2lb. Organic cashews for aprox. $20 on Amazon, they sell even cheaper so check it out. I use Terrasoul. You can always use vanilla paste instead of the bean because they are quite expensive. I use monkfruit instead of Maple syrup . Maple syrup can cost over $10 but use any other sweetener.
