Today we continue our series on Using a guided sharpening system by looking at Angles. Determining and maintaining your angle is the most important part of sharpening a knife. In this episode we try to oversimplify angles so that t he topic is easier to understand. What you need to know about sharpening angles is this: What will the knife be used for?
Once you determine that you can easily pick the right angle to sharpen at. The lower the angle the more delicate the edge becomes but the sharper the knife is. The higher the angle the more durable the edge becomes but the less sharp it will be. There is a good balance between sharpness and durability around the 18-22 degree mark which is where many professional sharpeners will sharpen at.
Because this topic is so broad we did not cover micro bevels, thinning, or reprofiling. Micro bevels, thinning the blade, and reprofiling as well as finding the TRUE angle will be covered in another episode in this series.
