This episode will help you better understand which stone to start with and which stone to finish on. The idea of a perfect sharpening is one where you remove the least amount of metal to get the edge you want.
We also touch on Diamonds and Aluminum Oxide in this episode but we don't go into great detail. As I said in episode 1 this series will be exhaustive and I believe that diamonds deserves it's own episode.

    The selection is very simple: take one medium diamond stone and if you want a polish, one high grit alu

    Very interesting! I know a lot about stones and sharpening but there are too many different brands, I need some new diamond stones and want the best I can get for my money Nice content! Subscribed!😊

    A sharpening friend of mine has become adept enough to be able to not only achieve hair whittling edges but hold them for extremely long amounts of time with daily use. I’m talking whittling a hair 15 times after 3 months of daily use. Then again he is using cts 204p but nevertheless impressive.

    I normally just buy new knifes when my old ones get too dull, but I'm gonna have to get into sharpening. Are you going to cover technique.

    Lol. Tossing the knife is what I used to do. As I started my business I started buying better knives with better steel that really hold an edge. So at $200+ a knife I figured it was worth it to teach myself how to sharpen them... There's something very relaxing about sharpening a knife... This series will literally cover everything. So technique is most certainly on the list. It's (the series) going to be designed for people who are brand new to sharpening or are considering sharpening their own knives.

    Nice informative video. Have you by chance had an opportunity to use the Atoma Diamond Stones for the Edge Pro, or plan on getting one in the future? ChefKnivesToGo has them. I'm thinking of getting the 140 grit and trying it out. This diamond will only be used for major repairs, thinning etc...

    Hey Brad. I currently have the 4 atomas that are available. I was going to do a video comparing the DMT's and the Atomas by scratch pattern and speed of cutting. I love the 140. She's a little pricey but in my opinion well worth the money. I use this stone to do most of my major work when it comes to thinning, reprofiling, fixing chips. You have to be careful because the 140 is ridiculous. She cuts like a boss and if you aren't careful you can really act up on a blade. With a guided system it's a little better but she's still a very aggressive stone. Check out this recent sharpening I did on a KAN chef's knife (AUS10) never had a chance against the 140... I fixed some chips, set the bevel, and had a burr in only 2 passes. Here it is. kzread.info/dash/bejne/mGGb182fibmrmbg.html If you plan on getting the 140 check out Jende Industries.
