I think I’m going to switch from shin to mama from now on because they are smaller portions and I’m assuming less sodium, and they are just as tasty especially the Tom yum

Shin ramyun is piece of instant junk, made of fully powdered synthetic artifucial seasoning powder
So another thing that my family loves to do is stir fry Mama Tom Yum noodles. Seared cabbage, chicken or shrimp, mushrooms, and egg. Cook/Soak the noodles in boiling water and then add them along with the packet seasoning and maybe a little fish sauce. Stir fry. Sprinkle shallot oil, fresh scallions, and a squeeze of lime on top. So good!
Growing up in New Orleans the Mama brand pork flavored in the yellow pack is the go to ramen noodles. In school we used to crush them up and add the seasoning packs and eat them raw. We didn’t really eat Maruchan or Top Ramen.
As someone who has spent hours preparing a single meal, I deeply appreciate a meal that is delicious, cheap and satisfying in only 20 minutes! Thanks, Jon! ❤
You are scoring the king mushrooms rather than scouring them. Significant difference. The first is to make shallow cuts, the second is to scrub vigorously.

One thing I’ll change is a poached egg right in he middle instead of a soft boiled one. Helps thicken the broth a little and gives you a runny yolk to dip the noods into

Omg as a Thai person, I’m so excited our brands have reached you!! I love every flavor of this brand!! It’s so simple and comforting. Also, it’s the best instant ramen brand to eat raw in terms of flavor imo! Not that I’m advocating that but eating it raw with white jasmine rice and soy sauce has been a comfort meal for me since I was a child😁😁

This pack is my absolute mvp. Every time I try to doctor up another brand with all these great add ins, I always find myself thinking “it’s not the Tom yum mama noodles…” this flavor is so punchy and the noodles never seem to soak up too much liquid. I live in America and ate this brand here for years, so when I actually traveled to Thailand and saw a street vendor selling late night mama noodles, I obviously had to have some. I had this as soup my entire life, but this street vendor made me some delicious stir fry mama noodles that night. That was probably 15 years ago or so? Whatever it was… I hope you are happy and healthy, mama noodle vendor…

Always boil my shrimp with coconut milk , add the packet seasoning, then add mushrooms and then put the noodle when heat is low. Tastes like the real deal

When I lived in Audubon Park, Kentucky, I lived off or ramen noodles. You should try the Nigerian Ramen noodles, they are hotter than Ricky Martin or Ethan Peck! :)
He made a Mama instant noodle into a famous noodle soup. It's noontime and I'm hungry for it!
Don't forget to mention the disodium ribonucleotides, a combination of disodium guanylate and disodium insoninate. These work with MSG to creat a fuller more balanced umami flavor, but are also much more expensive. If they are listed on the package, there is also MSG or some other glutimate, even if it isn't specifically listed (such as autolyzed yeast extract or "natural flavor). Cheaper processed foods will leave out this ingredient (I checked and Mama instant noodles include it). I'm sensitive to MSG and the presence of these ingredients tells me two things: there won't be as much MSG (the dose makes the poison) and it will taste better.
I wonder what exactly I did wrong when just cooking my pack of Mama the first time. I poured boiling water into the bowl with everything, covered and after three minutes the results were... Bad. To the point where I wondered why I paid more for Mama compared to my usual Indomie. When I gave it another try, I boiled the noodles in my saucepan directly on the stove. Then added the condiments and covered it for a minute or so. Turned out great!

This is what Google says about scoring king oyster mushrooms: "Scoring the mushroom slices is optional, but it does make the slices look more interesting with the browned edges. It can also make the slices easier to bite into." ...I've always scored but never knew why either...

They are delicious. The noodles are on a level all their own. The broth base to full bodied. I picked up 50 packages at Grocery Outlet this summer for 25 cents each. They still had a long expiration date. Took a while to open the first one. Was blown away. I love ramen. I have over 10 different brands because the International market carries over 40 varietie.. Enjoy❤🎉
These sound very nice! Ive never seen them down here though. My favorite instant noodles are indomie, and i definitely don't have an entire case of the chicken curry flavor in my pantry because i eat like a wastebin.

Yo Indomie is the bomb though! I used to live in Saudi Arabia and we used to get it there but it's not available in India (where I live currently). I miss it so much 🥲😭

I love this brand its been around since I was a kid. I would use chicken broth instead of just regular water because its add more flavor. I would just blanch the shrimp and mushroom since the noodle soup is already too greasy.

To me, the clear tom yum shrimp flavor is the undisputed champion of MAMA flavors, but some folks prefer the creamy tom yum (which mimics tom yum with coconut). And if for some reason you wan to try something new, the basic minced pork works just fine, especially if you're modifying that shit. Beware the duck flavor. Thai duck soup is one of my favorite soups in the Kingdom, so maybe that's why I was disappointed, but your mileage may vary. Of course, there a bunch of other flavors to be had, so if you don't have to buy a case at a time, you could have some fun just trying new MAMAs for a couple weeks at least. Finally, once you've mastered the MAMA soup game, it's time to start stir-frying the stuff.

To make it way better, but still very fast, I love using bok choy and some dried mushrooms - shiitake and wood ear being my favorites. Just throw it all in the water and simmer with the soup base, then enjoy! Soft boiled or marinated eggs only if I had the forethought...😂

I think you can, but collagen is what makes meat stocks get thick - it's basically gelatin, and is going to more than thicken, it will also enhance flavor.
