After an amazing two days in Salalah in southern Oman, my time in the city was nearly over. Come with me on one last hurrah here as I enjoy some incredible Omani mountain food for dinner in Salalah, Oman!
My friend and guide Khalid and I would be wrapping up my time there in style, with a unique mountain food feast. Khalid teased that I’ve never tasted anything like it, so I was excited to dig in!

We were with some guys who were preparing dishes by the side of a highway in the middle of nowhere. They were preparing dried camel meat, which they boil and mix with rice to make a dish called kabsah. We also had a campfire with stones from the mountains, which they’d boil milk and bake bread over.
Next, we had some Omani coffee with cardamom and onions. Then, Khalid joined in and helped them cut the camel and I helped tend to the fire, where they were boiling some tea.
They were using a blowtorch on the rocks, which turned the nearly white! I tried it myself, but my hands were too hot! They also had some cow milk!
Next, they added the camel meat, tomatoes, onions, and garlic to a pressure cooker. Later, they’d add rice. They also had some cow milk, which they added the boiling hot stones to. I’d never seen anything like it!
They also were making a flour and water dish called aseedah. It was very thick and pasty and hard to stir and mix! Then, they heated some cow oil next to the fire and added some to the paste to loosen it up.
Meanwhile, the milk had a smoky taste that was easily the most unique milk I’ve ever had in my life. I don’t consume a lot of dairy, but this was great!
Next, they took some bread dough and spread it directly on top of the hot stones on the campfire! They also put hot stones on top to help it cook! Then, they added more cow oil to the paste.
By then, the bread was ready! The rocks were stuck in it. It was the most unique bread I’d ever seen. Meanwhile, the camel stew was ready for the rice. I tried a piece of the camel. It was a little crispy and so tender, it fell apart in my mouth!
They added some honey to the aseedah. Then, you get a bit on your finger and dip it into the cow oil. It was really nice and had a hint of sweetness from the honey! I loved that the honey was a bit thinner than usual. I would have eaten more but we had more dishes to eat!
Next was the kabsah, which was the dried camel and rice dish with garlic and vegetables. They added the other camel on top. While we let it cool, we went for the bread, which was smoky and crispy in some spots and doughier in others.
I loved the camel meat, which was outstanding. It was still really hot-so hot I could barely dig in with my hands. The bone marrow was also fantastic!
What an amazing local meal before it was time for me to head to the airport back to Muscat!

    Well David, I have come to the end of the Oman series. You did such a fantastic job on this one. This one was truly adventurous with some of the things you did. This video though topped it all off. It was like a survivalist dream. The way he cooked the bread and heated the milk with those hot stones; who would have thought. Very innovative. Maybe campers should try that. It's so sad, after spending time with people, to see a visit come to an end. When Khalid said that it's not goodbye but "see you soon", it broke my heart. The Omanis were so welcoming and are such nice, friendly and hospitable people. I wish them peace. Very nice ending to another very productive series. PEACE out 🙏🕊️🇹🇹🇨🇦

    Hello, this is a meal of porridge that every Arab house makes, but the taste differs from each country for several factors. Porridge is a very old food that dates back to 32,000 years if my memory does not betray me, as some Italian scientists discovered porridge in a cave.     this is a traditional way and we use special type of stones that can be found in the river banks,and they are usually washed before used.They give the milk unique earthy flavour.Also it's a way to bring the milk to boil to kill all bacterial too.
