SARDINIA, ITALY - Today we have the once in a lifetime opportunity to spend time with Paola Abraini, one of just three people on earth who have mastered the art of making su filindeu - a pasta that’s from the mountains of Sardinia. We’ll learn and get a demonstration of exactly how she makes it, get to try making it ourselves, and then we’ll eat it the traditional way they eat this rare pasta in Sardinia!

Also known as Threads of God, Su Filindeu is the rarest pasta in the world, and something only three people on earth can actually make correctly. Chef’s around the world have tried to make it, but failed. And something I found very interesting is one of the biggest Italian pasta manufacturers tried to make a machine to produce it, and they also failed.
To make Su Filindeu, Paola first made the dough and had to knead it and stretch it into the right texture. She did many test pulls and it kept feeling the dough until perfect. The strategy take 8 pulls on the dough to create 256 threads, of the smallest noodles you can imagine - almost the thickness of your hair.
After stretching out the noodles, they are laid out and dried and cut into bite sized pieces. The noodles are then cooked the traditional way with mutton broth and a special sheep cheese from Sardinia.
It was truly something unique and special, and being able to meet Paola was a true honor!

So greatful to Mark for showing every side and shade of Italian cuisine. Whenever I ask my friends what they think of Italian food they only know about pizza and pasta (only the most famous pastas probably like carbonara) not knowing that basically every single town has its own cuisine. Loving this series starting from Milano regional dishes which often get ignored till the beautiful and diverse Sardegna. Amazing work!

When Mark said: "I'm still trying to comprehend that." I started tearing up. Such a humble man, such a great person. I wish I could live his life.
I agree with Jeffrey that lady is making art not just pasta. That segment reminded me of my mom who would make her own pasta and she would have the pasta laying all over the kitchen drying. It would be on the table, chairs, cabinets, there wasn't a spot anywhere in that kitchen that didn't have pasta laying all over it.🍝😆
A machine is a cold hard piece of equipment. An engineer is the creator of the cold hard machine. This woman has a soul in which she gives to her pasta. No machine could ever replicate that.

I am a proud 43 years old Sardinian and Mark, I am so impressed you got to find this gem and film it in such a beautiful and dedicated way, as you always do. Our land is a misterious and ancestral land, essential and poetic, and you managed to capture it and sync to it. Your work is oustanding, I have followed most of your videos and learned from your tips even if I am Italian. I will go to Cibreo after seeing your video even if my partner is from Florence. I will go and try the Filindeu even if I'm Sardinian. I have known Roscioli in Rome thanks to you, even if I go there 3-4 times a year. That's what you do, you teach even to italian foodies, like me. This may be considered a gem in Sardinia but this is so normal in China. Any street noodle shop in China makes this everyday as a cheap eat. After all Marco Polo learned how to make pasta from China. In China I see them making pulled noodle like this in few seconds. No drama.

Your videos are very educational. In my travels in Italy, Sardinia, Corsica, Sicily, I have never heard of a pasta like this one. I have seen people in Italy and China make hand made noodles that are thin. But the noodles that the lady made, I've never seen that. Pasta of the Gods. Soup of the Gods. Dinner of the Gods. What you, Ying, and your friends ate, you cannot buy for love or money. I now will look into that Sardinian farm stead. I want to have the rarest pasta also!!! That woman is a national treasure!!!

I would literally pay good money for this experience!! I absolutely love cheese stews and tender meats with veggies especially on a cold chilly day. That crisscross pasta is one of a kind and the local authentic fresh cheese compliments each other perfectly. The tender mutton with garden herbs & veggies is mouthwatering worthy as well. Italian food is indeed considered to be one of the top three cuisines of the world, along with Indian and I can’t remember which, but it isn’t French, although some think so. I believe it’s Chinese.
