Nick, you are supposed to blue the wok, get it ripping hot until it becomes blue. Then coat with layers and layers of oil until it becomes all black.

He uses white pepper! That’s so cool! Even some of my friends back in China doesn’t know that white pepper is actually used widely in our cooking, especially street foods. They can create great umami flavor just like MSG.

@@julio-montez I'm Asian and I don't find it offensive at all. It's one thing to play into a stereotype with harmless fun and another to do it maliciously, especially since he is Asian as well. He just reminds me of my actual family with the haiya's and whatnot. His impressions feel like home instead of racist jokes with pulling the corners of eyes etc. He also has a bunch of Chinese fans on sites like Bilibili as well.

I cooked my own egg fried rice for the first time, and used your recipe as inspiration. It tasted good!
That toasted rice is really good. We call it "tutong" in the philippines. We don't really make it but it's often naturally there when we cook rice in the stove. For many, it's the best part in cooked rice.

Less soy sauce, please! The rest are fine to me! 🥰 To make it my own version fried rice, I put some chopped chinese kale to add some greenness! Fuiyoh! 😆 And some toasted peanut to add more crunchiness! No matter whole / half / peeled or unpeeled! Voila! 😁

Why is no one talking about how Manny told Nick he could spank him 😂
Few comments here. 1) Since you don’t have a wok burner I’d suggest going high heat and trying to keep the wok on the heat most of the time. I’d even go as far as not mixing it for a few seconds to allow the rice to toast more. 2) Soy sauce should be sizzling quite a bit when added to the wok. Put on the sides so that it sears a bit (adds more flavor imo). 3) The crispy rice was a really nice addition. I remember when my mother used to make fried rice that part was always my favorite when it stuck to the bottom of the pan. 4) This is a matter of personal preference but I would add the egg later in the process so it doesn’t overcook. Especially when the heat is put on super high they can get dry fairly quickly.

Yeah with the egg part it's ok to fry it up and take it off it halfway so you can cook it all the way after (basically you put the half-cooked egg at the end)

the way that you made the crispy rice, it is also a part of Filipino Fried Rice(sometimes). When there is crispy or burnt rice under the cooked rice, it is added with the fried rice(mostly).
I would love to see you make some persian dishes some time! Or even some desserts like Sholeh Zard!

I never thought about adding crispy rice to fried rice That’s like a soft core version of a Laos dish called Nam Khao Which is a curry spiced rice and meat patty fried to perfection and forms a really nice crunchy outer shell while inside is tender succulent rice Or you can mash it up throw in some peanuts and pickled pork skins and chili’s and eat it in a salad wrap It’s a party favorite

Commented on Uncle Roger's video about this because he did not point this out and because I couldn't see if anyone else pointed this out, but I think this point is very important. Before you season your wok, you should use detergent to wash off the anti-rust, not-for-human-consumption machine oil that comes on the wok. Not only that, but you should temper the wok before seasoning to increase its heat conductivity and ability to heat up. @@Abdew62 I make the distinction between 开锅 (initial tempering + seasoning) and 养锅 (general seasoning). Nick does season here with pork lard but skips the important step of washing off the anti-rust layer applied by the foundry when the wok is shipped out. He doesn't temper the wok either. I have seen that video by the way; it's a good reminder on how dangerous seasoning can be even if you are relatively careful.

He probably put sugar in the wok instead, if you know which sugar I mean 😂😂
Nick is so powerful that even when he says put a whole pack of msg , i think was reasonable
A new iron wok usually will be processed before it's first use (AKA"開鑊"). clean it, burn it hot, glaze it with animal fat/oil, heat it till oil smoke, rinse it with water, and repeat the oil-treatment several times. Once it's done, the wok will have a slightly metallic blue color, then you get a well non-stick and highly heat conductive wok. At least that's what my grandpa did when I was a kid, he then used that wok to beat my and my cousins' asses.

@@khairulnizam922 I'm not Chinese, so I wouldn't know. However I've watched all of uncle Roger's videos on egg fried rice, and he's always talking about using shallots, not onions 🤷🏽♀️

@@squid.3044 Not really, malaysian fried rice will have some belacan and more red chillies. Some anchovies maybe. Not to be confused with nasi goreng kampung tho.
