Ube Creme Brûlée Cake | No-Bake Ube Creme Brûlée Cake

Hello!!! I’m back🤣
First of all sorry for not being able to film for a very long time. Some of you know that I did start working and it’s taking so much of my time but today I really wanted to share with you guys this Ube creme brulee cake recipe. I’m showing the steamed version but you can easily make this cake in the oven. If you do decide to make it in the oven make sure not to wrap with foil. You can also use this recipe to make just classic Ube cake or Ube custard. It’s a chiffon cake and you’re cake will come out nice and airy. It’s not overly sweet which I like. I have been making this cake a lot lately for orders. I thought I’d share the recipe just in time for Christmas and New Years!

Ube Creme Brulee Cake| No-Bake Ube Creme Brulee Cake
Ube Chiffon Cake:
Egg whites 346g (12 each)
Cream of Tartar 3g (1 tspn)
Yolks 166g (12 each)
Sugar 536g (2 1/4 cups)
All purpose flour 454g (3 1/4 cup)
Vegetable oil 178g (3/4 and 1 Tblspn)
Evaporated milk 308g (1 1/4 cup)
Baking powder 18g ( 4 1/2 tspn)
Salt 1/4 tspn
Ube extract 3 Tblspn
Pastry cream:
Milk 520g (2 cups)
Yolks 76g (5 each)
Sugar 124g (1/2 cup)
Butter 37g (2 Tblspn)
Vanilla 19g (2 Tblspn)
Cornstarch 53g (1/3 cup)
Ube cream filling.
Powdered sugar 38g (1/4 cup)
Ube extract 1 Tblspn
Heavy cream 634g (3 cups)
Sugar: for brulee toppings

    Chef can I bake and how many minutes it will take and celsius to use . And if Chill the cake , still the sugar still hard ?

    what could be the reason why my chiffon cakes sinks at the bottom once it flipped over (sometimes shrinks from the sides)?

    For thw pastry cream, if I use Heavy cream instead of milk do I have to lessen cornstarch or as is?

    You can use the same amount of cornstarch

    You can use fresh whole milk or evaporated milk.

    Used 12 whites from 12 large eggs. Separate the whites and yolks
