Today we prepared two delicious dishes from liver. Liver stew ( ჯიგრის ყაურმა) and barbecue (kebab). We used pork liver, although the same dishes can be prepared from beef or lamb liver.
Both dishes are traditional Georgian. The recipe is from the 17th century.
