Truck Camper on the Prairie / Keto Recipes in the Arctic Fox.

This week Mandi and I went to the SE part of the state and checked out a National Park at Pipe Stone. The prairie in this part of the state is beautiful. We are trying another one of Mandi's recipes. It tasted delicious. We spent the night at Walmart on night, and Blue Mound State Park the next. We had a beautiful hike in the park. Thank you so much for coming along with Mandi and I on this road trip.

    Hey Kenny, been binge watching your videos. I’m originally from western Wisconsin, lived in Minnesota for five years but now out in Oregon. My other half, so jealous of all your camp locations. I have to remind him it’s flat, ton of lakes. We are on west side of the state, it is a struggle for us to find dispersed camping here. Mountains, rugged land, lots of small rivers, creeks but so difficult to get to. On our last adventure this past weekend he became frustrated looking for a spot. He says Kenny can spit and hit three lakes. I said no, but he did spit and hit two lakes (reference to other video where you set up in between two lakes). We had a good laugh. Your videos make me miss home. We can relate so much to your comments on getting away from people. We laugh at the ol Midwest accent. He never heard Oofta before. :) Nice version of jalapeños poppers and love Big Mac in a bowl idea. I cringed when I saw you handling the peppers. You must have some tough skin. I always carry box of nitrile gloves, camping and in kitchen for stuff like that. Thanks for the great videos, you are a natural!     Thank you so much! I love the wonderful comment. My dad was from Medford Oregon. He said he always wanted to go back and visit one day. I'm sure it has changed a lot from the 60's when he was growing up. The peppers don't bother the hands....it's when I wipe my forehead and eyebrows that i think I should have worn gloves. lol You will have to check out tonight's video. I was expecting to find occupied campsites this weekend. Instead, I found an amazing remote spot on a lake. I had the entire place to myself. It was so beautiful and relaxing. I really tried to capture the feeling of this place. I hope it shines through in the video.

    @@KennyOfAllTradesI saw the upload while I was working. I will, you have two loyal subscribers here in Oregon. Even though I can’t camp in the Midwest right now I enjoy your videos from cooking to the sights, experiences, blood sucking mosquitoes and them pesky deer flies, the good out weighs the bad. Makes me miss home. Oofta! Medford, yes I can see why he long to be back in the Midwest. Yes, worse now but probably was not that great back then. Beautiful clear rivers all over Oregon, the mountains and huge trees make it difficult to leave. He was torn between two greats, Minnesota and Oregon.

    Thanks for checking the old videos. In the beginning I had no clue what I was doing editing the videos. The audio in the first dozen videos is bad but it's fun to see where a person starts and how they learn.

    The rocks in the quarry at Blue Mounds State Park are called Sioux Quartzite. I've been to that park 3 times in the 80s and 90s.

    I would love to spend a little more time in that area. It is a beautiful part of our state that I rarely have a chance to visit. I believe there are some hieroglyphics down there. I would love to make a video showing them one day.

    I visited Pipestone last summer after visiting the Jolly Green Giant in Blue Earth MN. It was a cool place! The waterfalls were called Winnie Wissa Falls, my granddaughters name is Winne so that was cool! Also interesting was how the tribes would call a truce when they gathered at their sacred place to collect the stone!! Nice video!!

    I have the same luck with campers pulling next to me also. Last October I was camping at a campground in Northern Upstate NY and being later in the season it was cooler temps. I go with a cousin of mine for an annual fishing trip. We ended up staying at a campground near the high peaks. When we got there we were the only ones. Later on that afternoon a retired couple pulled in right next to us. After a couple days the husband came over and apologized for doing so stating that even though they are avid campers they just felt safer knowing we were there.

    I think your story is spot on with why people set up camp next to others. I have a video from last summer where I was in Wyoming. It was extremely secluded and the campground was completely empty. The second day a person set up a tent 20 yards away from me. In the comments we all decided that people feel safer in numbers. I can understand, but it's not my style. Thanks for watching and leaving the comment!

    I find that funny with a whole park, they park next to youz. We have had that happen to us also. We have a dog, so we try and stay away from people so the dog doesn't bark, but low and behold someone will park by us. Another good video in the books🤙

    We were boondocking in Az and had a guy in a truck camper park in our campsite less than a 100 ft. Away. I thought maybe he was there just for the night, but nope. A day later another spot opened up, so we hurriedly packed up and hooked up to move, and while getting the last of our stuff, he packed and left. Some people's kids.

    Hi Kenny! Loved the Pipestone quarry. Many fantastic ancient Native American pipes were made of this material. The Hopewell Culture going back 2,000 years made fantastic effigy pipes including frogs, snakes, wolves, bears and disc shaped. They were a true artisan culture with stone. A fantastic pipestone Hopewell pipe was found years ago by a local Dentist that I knew just North of Quincy on a river bluff. The Native Cultures had quite a trade route along the Mississippi River. And to those that insist on camping smack beside another camper when the whole dang park is vacant, drives me nuts, these people need to stop being so flaky insecure and ruining it for someone else! 🙄 I don’t understand. 🍻

    You guys are making Keto dieting look like a lot of fun. The compactness of the ingredients makes it idea for a truck camper. I don’t have to find room for loaves of bread! The Big Mac salad if a winner along with the jalapeño poppers. I took the family to Pipestone a lot of years ago and still have the pipe bowl I got from a native craftsman. Thanks for the ride!

One thing I have been thinking about is mounting my generator up front like you have, I’m just not sure about it yet, but I have looked at what I need to make it work. Thanks Kenny👍🏼

    I have not had any issues with the front mounted generator. I bought the receiver from etrailer. It was $140 and took me about 45 minutes to install it. The front basket is from Harbor Freight. It is a smaller basket designed for ATVs. It fits the generator and Grill perfectly.

    I used to run into that same thing at the beach... miles and miles of open beach, and people would pull up right next to me. More than once I explained (nicely?) that there was this thing called privacy? Sometimes I just packed up and left. Ed

    I guess some people feel safer around other campers...I've never done camping in my more than 5 decades of existence ever but if I will I'd do it near other campers

    Smoked paprika, that's the kicker. I've probably have had smoked paprika in my spice cabinet forever, never used it. NOW! My only substitution was sweet and spicy pickles and chopped up tortilla, slightly browned in a skillet as a topping for my salad. Got home late this evening, watched your video, wasn't even going to bother with making anything to eat. I believe at the longest, it maybe took me just over 15 minutes to make the entire dish. Way to go Mandy, now that's a homerun recipe. Trust me everyone, it actually does taste like a Big Mac, well a Big Mac with smoked paprika. I highly recommend it.👍👍

    So, I've been bing/jing the videos, not in order, but I think I've figured out the family members. It was years ago, but visiting the prairie in the fall is incredible. Just a quick friendly note, you twice mention you're in southeast Minnesota.... don't want to confuse the non-Minnesotans. Thanks for these videos.... they continue to bring back so many memories.

    What a cool video. I have yet to visit Pipestone. Maybe I will take a trip there this year. Blue mound state park is pretty with the rolling hills. That is where I saw numerous turkey vultures when I was there a couple of years ago.

    The The prairies are so diverse themselves it's like their own little environment and it's just wonderful totally different and very captivating. The food dishes looked really good. I may try the big Mac in a bowl. Safe travels.

    Your mud scene reminded me how much I appreciate having a set of GoTREDS with me in the truck camper. They fold up into stackable blocks and I most often use them to level out my truck. They are 100% made in the USA and I got a discount for being Public Safety. Just an option if you find yourself spinning wheels.

    Those look really nice. I like that you can also level out the truck with them. The price is not bad compared to other products I looked at. I'm not seeing a discount for Public Safety anymore. Any discounts help. I work for MN DPS and that might be the deciding factor to pull the trigger.

    Another great video! Also, little known fact.... it's not the seed of the jalapeno that makes it hot but the ribbing of the pepper that you scrape out.... leave some in or chop and add back to your cheese mix to give it a little more kick.

    @@KennyOfAllTrades Since it was so destructive they didnt do a cause investigation. I can say tho the 1st 2 hrs of my drive the furnace was off. We stopped and figured I'd turn the furnace on since I was full of water. 30 mins into my drive the fire happened. When I 1st noticed the fire I could see flames coming from the furnace area hard to say for certain it was the furnace or a electrical short in same area. But this was the 1st time I had ever ran the furnace while traveling.

    That's to bad. At least you are OK. I have seen a few vehicle fires, they go quickly with incredible heat! You will notice from my videos that I also run my furnace while driving. I guess it's a gamble. Hopefully everything lost was replaceable.

    I can't believe I messed that up. I think Mandy caught that after i already uploaded it. Back when this video first aired, I was getting around 300 views per video. I never expected the channel to grow. I did not think anyone would even catch the mistake just because no one really watched the channel. I appreciate you checking out some of the older videos! You will probably find a number of mistakes I make. Sometimes, my mouth moves faster than my brain can think.

    It's awesome to know that this channel is helping me make contacts all over the country. I've had a few viewers offer me a place to stay while traveling. I think it would be awesome to have a road trip planned where I could travel the is strictly Boondocking and visiting with viewers. It would be cool to see how others are traveling in their rigs.

    I haven't, I use it only a few times a year...drag out the fish house and move things around the yard. I do have a small trailer but never thought about bringing it with. That's a good idea though.

    I went with Fleet Farms Gell RV Battery. The name is Road Runner. It has an 18 month warranty. Hopefully they work well. Previously I have always used Interstate. I found its getting increasingly difficult to find AGM, Gell or lithium in stock.

    I can understand feeling safer next to others in an empty campground. Thankfully the other camper was respectful, no loud noises and I didn't have a smoldering campfire drafting through my camper all night. I'm ok with those types of neighbors. It's the opposite that I find annoying. You just never know who is setting up next door. The Big Mac in a bowl really tastes similar to a Big Mac. It's delicious!

    I notice when you did your tour of your rig video, you didn't mention the front suspension.. I recently put timbrens on the front of my Ram, and was wondering if you had done the same.

    No I did not. I installed the suspension Max leveling kit to the front of the truck. I did turn up the torsion bars a little bit. No other suspension modifications were done up front

    I'm a big GMC Chevy fan. I like the 6.0 for a motor. The 5.3 is strong, I just don't like the cylinder deactivation. I think a lot of companies have aftermarket scanners to shut that feature off. The truth is I have never spent a lot of time in a converted van. My opinions would be based on the videos I see on KZread. I like the extended van with cargo doors. I think the cargo doors will provide more opportunities for storage and who dosen't want more space. I would look at the 2500 or 3500 for future additions that weigh a lot.. Hightop roof..storage racks...multiple batteries...fresh water. I think a person would be surprised ar how much stuff weighs. But don't take my word for it. Like I said I'm biased towards GMC and never converted a van.

    The big Diesel motor that's used in the Chevy / GMC line up. That the motor I'm running in the truck. Vic from Down By The River is also running a deisel in his truck.

    I got out almost 2 years ago. I have it there to remind me of where I've been and how good I have it now. I miss my brothers and sisters, but not the job. I recognized my spark was gone, and my ability to show empathy was dwindling. It was time for me to move on.

    Mandi is my girlfriend. She comes with every once in a while. She has not made an appearance on camera. She says KZread is my deal and dosen't want to be in the videos. I have caught her image a few times in the rearview mirror just to keep her on her toes. We work opposite schedules and don't have a lot of time together. I have been going on weekend trips for years, it was her idea to start the channel so her and my family members could follow along. I also have one video where my 16 year old daughter came with. She was looking forward to being on camera. I watch that video at least once a month. Thanks for checking out the channel.

    I have been looking at Lectric for a long time. Citizen Cycle has compared it to Rad Power Bikes. The Rad and your Lectric are really comparable. I would be interested in the new Lectric if it's lighter. That would be great!
