In this video I show you how to make Traditional South African dish Tripe. You can enjoy this Tripe recipe with Pap or Samp.
TRIPE RECIPE | MOGODU/ Ulusu/ Matumbu | South African Traditional Food
Ingredients:
OX Tripe (use any tripe)
1 onion
1 bay leaf
1/2 green, red pepper
1 tsp medium curry powder
1 tbsp BBQ spice
1 tbsp crushed garlic & ginger
Salt & pepper to taste
1 tbsp mixed herbs
2 chopped tomatoes
2 beef stock cubes
1 thumb size ginger
Water to boil our tripe
Vinegar to wash our tripe

    Prefer it with intestines....boil them together until cooked ...cut them nicely with scissors for that ..add salt and pepper..serve with pap❤

    This was discovered with me in mind...I eat tripe every day..365 days a year...65 and always mistaken for a 3 year old.Organ meats are super healthy.

    For pro-bono sake let's eat first for health reasons then we can do the mess we like doing. Not to take anything here but herbs do better than processed seasonings and I bat you add them after cooking so vitamins are not washed up to n what we call the ocean in gastronomy. Remember we eat to stay healthy not to pack our guts with trash. Buying healthy foods don't mean you eat healthy, the key or rather the magic to use correct genre since we talking gastronomy is preparations

    It’s nice to see and learn how meals are cooked in other cultures. In Nigeria we peel the ‘black’ bit off the skin before cooking. Actually I didn’t even know the black coating is edible. This looks good though and I might try it and see. 👍

For the first time, I bought tripe from a Nigerian store last weekend, just finished washing it before I came on youtube to search for Tripe recipe. But I was wondering why the tripe is light brown color and not black like in my country, Zambia!!

    @@Angel.Kariba In some countries, especially the US, tripe is bleached white. If you want to buy tripe in its natural colours, you want to go an Asian supermarket, where they sell it unbleached

    Thank you they even show Soupa Kanja on international networks, they may struggle to pronounce it like I misspelled it above and it has various names across Africa and the Caribbean but it's essentially the same. Let's expose these African cuisines because even myself still want to learn more of African cuisines than depending on foreign networks to teach me about African cuisines.

    thank you for this recipe, i am def going to try it. Just one clarification. Did you use both beef and chicken stock or only chicken, The jug full of stock in the boiling process was chicken stock, and later you added a chicken cube to the pot. Can i make the same recipe with only beef stock?

    Utumbo, matumbo, etc is the same word, the root is -tumbo, the prefix "u" or "ma" is regional or geographical inflection of our beautiful Bantu language.

    Oh wow, in zimbabwe in shona the intestines are called matumbu. Then tripe we call them maghuru I've found Swahili and shona have some common similarities

    @@ruesamz It is one Bantu language. You can go from The middle of Cameroun to Cape Town, and see that our language is one. I am always surprised at how ignorant people are of this fact.

    @@lavisaxipula8349 Because it is one Bantu language. Xhosa is not fundamentally different from LuGanda in (B)Uganda, or KiKongo. We are one big Bantu language group.

    I agree with you, but I have Liberian food in my fridge, made for me by a friend, that I fail to eat because there are simply too many ingredients in it. It is the same way with most Indian food. This does not stop Liberians or Indians from enjoying their food, because they have acquired its taste from youth. On the other hand, when I eat Mexican food, I find it to be very basic, with its main ingredients being salt. However, people who love it consider it to be fantastic.
