You can also cook or smoke smelly meat with rosemary herbs. 🌿 It reduces the smell of the meat and gives it a light earthy flavor. It would go well with this fish!

12:55 I like the idea of making a meal from meat that other's wil ot eat. As a boy I grew up on a small farm, and we hunted for food weekly. Some years Racoons were VERY pluntiful, actually a burden for farmers as ty eat everything. I would hunt them and get $1 for the fur (if it wa a good one), or trade it for some bullets. The take the back legs (Racoon has very big back legs) and boil them in salt water, Then grind them with pickles or other home made preserves, and serve them lie that hot? Or cold for sandwich spread! .. I liked it because I could eat as much as I wanted :)

This fish looks similar to our “kala” or unicorn fish here in Hawaii. Here, we throw the whole fish on the grill, guts ad skin attached. When it’s cooked, we peel the skin back and eat the flesh avoiding the guts. But some brave people will dip the flesh in the guts for extra umami.
