Here's a tip for building bridges: you should be able to use pgup and pgdown or something before you start drawing the road or rail to set it's STARTING build height, allowing you to build short, straight bridges over the obstacle and then connect up to it for a much nicer looking bridge overall rather than those ugly long arches you're doing. It should also work out cheaper cost wise

I tend to meta-game; industries will still pay by distance/speed even if there's a much closer supply. So I pick, say, a farm next to a city that wants food, and then train the wheat to a bakery halfway across the map, with boxcars on the same train to return the bread. I spent 32 million on a double bridge across the big lake in the center of this playthrough's map (same seed and starting conditions) to do this with steel, but the lines that use it were soon making ten million a year, and five times that later on.

My tip for trucking goods is to place the truck stop as far from the resource / as close to the destination as possible. i.e. edge of catchment area. If you do that on both source and destination you can dramatically reduce the distance the trucks have to travel. Somewhat related, the route frequency (secs) is handy to look at if you are trying to optimize a route.

In a way, the industries that are not doing anything, you could consider then only a potential industry place holder until you provide a way for them to actually produce. A company isn't just going to build a facility only for it to sit there and do nothing, but the location is still viable for that industry and gives you an idea of where to build transportation by "networking" with the industry builders.

I put a truck stop there to drop off grain as thought would be cheaper. I also added a station to The side of Thatcham that wanted the bread. So didn’t require the food drop off by truck. I also used both grain places which seemed to work ok. Be interesting to compare and contrast the two similar ways.

You could thinking about adjusting the train station by the beer to food industry.....make it a longer platform, reconfigure the cargo building to be on the left as far "south" as possible, and then when you add your passenger platform and building you can place it on the right as far "north" as possible. You are talking about something similar at 10:40 of the video.

You really don't have to think too much about throughstations vs terminus stations... most of the time you won't be building more than 1-2 platforms to take resources from a producer. You will want these platforms to stay clear of traffic because trains turn there in any case, so you need more tracks to pass by anyway. And if you're scared that you can't build pass-through-tracks because the terminus-building keeps finishing off rails: just deleted it in the modular build menu for the station, build your tracks a bit longer, build the building again - profits
