Mutton Shuwa is an Omani dish for whole mutton/ lamb. SHUWA - Slow Cooked Lamb/mutton served over Aromatic Basmati Rice -Omani Delicacy, The dish is seasoned with Ginger , garlic , turmarind and dates paste-an aromatic blend of spices-and it is served on a bed of rice.

First video- arabic shawarma is uploaded on 28 March 2020 and we are at position of 150+ videos and 5k+ subscribers as of now after 1 year , Today 28 March 2021.A special recipe as a continuation of 100th video Live cooking with chef from Jeder al Sharqia restaurant.While shuwa is traditionally cooked wrapped in banana leaves and buried in a pit of hot coals to cook for anything from 6 hours to 2 days, Cheff AlAli's recipe is suitable for cooking in the oven so is a great way to try this fantastic roast lamb recipe at home.
Shuwa is a typical Omani delicacy prepared only on very special occasions. Eid is probably the most common occasion hence “” The meat festival “” The method of preparing shuwa is elaborate. The meat is marinated with spices and then wrapped in sacks made of dry banana or palm leaves. These sacks are then thrown into the underground sand oven, which is covered with a lid and sealed so that no smoke escapes. In some villages, the meat is cooked for 24 hours while in others it is believed that meat tastes better after 48 hours. The meat becomes extremely tender and it is impregnated with spices and herbs before cooking to give it a very distinct taste, usually served with rice.
In UAE also it is called ‘Shuwaa’ where it is kept wrapped in date palm tree leaves before keeping in a submerged oven,There are also other variations to this technique such as ‘Madfoon’ (meaning buried) in Saudi Arabia and Yemen, where it is wrapped in aluminum foil and kept on open heat source.Quzi is an Iraqi dish that is prepared with rice and a whole roasted lamb. In Jordan, and Syria it is known as ‘Zarb’ where the meat is divided into smaller pieces and kept with vegetables and bread dough so that the flavors are enhanced. Another variant is called ‘Haneeth’, where it is cooked inside a hot Tabun (bread oven) and you can find it in most Middle Eastern countries as well as the Horn of Africa and North Africa.

Chili flakes-1/2 TBS
Kashmeeri chili powder-1 tsp
Turmeric powder-1/2 tsp
Banana leaves-2

Onion-1/2 medium
Garlic-2 clove
Whole spices

Yes, it’s commonly available in Oman and some specific shop in uae. Not sure about other place . We are using homemade shuwa masala. Glad you like the Omani mutton shuwa recipe , thank you.
