Summer Special - Baigan Borani
Recipe
2 tomatoes
1 large onion
2 large brinjals
2 tbsp oil
1 tbsp garlic paste
Puree of 1 large tomato
1 tbsp tomato paste (optional) 1⁄2 tsp kashmiri red chilli pwd 1⁄2 tsp turmeric pwd
1⁄2 tsp black pepper
1⁄2 tsp coriander pwd Salt
2 sliced green chillies
3/4 cup yogurt
2 cloves garlic Salt as required
Dried mint/basil
Chopped coriander
• Cut the vegetables in thick slices
Fry the brinjal on both sides till golden & crispy
• In a pan add the oil & garlic. Fry till golden
• Add the tomato puree and paste, spices, green chilli and cook till the masala leaves oil
• Now layer the masala with the tomato slices, onion rings and fried eggplants as shown (onions are layered only once)
• Pour some water and cover the lid. Cook on medium low flame for 10 minutes till softened
• In a bowl mix the yogurt, garlic and salt
• Plate the dish as shown and garnish with dried mint & coriander
