Trader Vic's La Florida Daiquiri [Recipe]

If you ordered this cocktail in Cuba at Trader Vic's, would you order it again? Let's see if I would.
To make the La Florida Daiquiri:

1 oz fresh lime juice
1 tsp bar sugar
1 tsp maraschino liqueur
2 oz light Puerto Rican rum
Finger squeeze lime juice over 1 1/2 scoops shaved ice in container of electric drink mixer. Add remaining ingredients. Blend. Pour into chilled tiki stem champagne glass.

    Sweet video. I love Maraschino Liqueur, but I have noticed it's like the cilantro of cocktails. People either love it or hate it. Keep it up!

    Back in the 1950s most everyone smoked. No one had their full faculties of taste and smell. So everything had the flavors ramped up.

    Was in Havana Xmas '07. Rum there is fantastic. Brought home as much as was allowed. Sadly we have none left.

    Per the Floridita recipe book, I like sticking with a 1/2 oz lime juice. My favorite is the daiquiri 3, Floridita Special.

    When preparing my Cuba Libres or a Hemingway Special I've always squeezed my limes by hand. Didn't realize what a difference this makes...

    I would imagine the quality and ripeness of the lime used could factor in a bunch. Kind of like when you have an orange picked at the prime ripeness and grown in the right conditions. fruit is a fickle thing! At our Co Op grocery store where I live they seasonally sell something called a "cocktail grapefruit" that is better than any other grapefruit I've used in cocktails.

    Also regional differences in fruit. Is the current grocery store Persian limes the same taste and acidity as the early 1900s Creole lime that was found in Cuba? If you compare Persian limes to key limes you know Persian limes are significantly more tart.

    Funny how for regular Daiquiris we double strain for no ice shards yet this version is full of shaved ice. Still love it though!

    Maraschino really doesn't have a cherry taste. I mostly taste the pits.

    I don't get a lot of what could be called a traditional "cherry flavor" from Luxardo Maraschino liqueur. While the flesh of the sour Marasca cherries is used in the distillation, also used are the stems, pits, sprigs and leaves. I find these other ingredients to be most prominant, producing more of a nutty floral bitterness with some brightness more than a fruit-forward flavor. Its most prominent note is an herbal almond flavor to most folks. It's sweet up front and then drying on the finish. It's used in many cocktails such as the Last Word, Hemingway Daiquiri, Brooklyn, Casino and the Demerara Dry Float. I find it fantastic but is it an acquired taste? Yeah, probably.

    covid dramatically changed my taste buds and I now like lime juice freshly squeezed. I'll probably make this as I can't get too tart anymore

    Gonna throw a little science in here. The actual reason for the difference in flavor was the juicer Vic was using. Those old-school juicers were made out of either galvanized metal or uncoated aluminum which react very quickly with the high acid lime juice giving off a strong bitter metallic flavor. So yes, hand squeezing did make all the difference, just not for the reason he assumed i.e. more lime oil. A modern hand juicer, the kind that inverts the citrus half, also extracts a considerable amount of oils.

    I also will throw a little science out there as well. A raw aluminum citrus juicer will oxidize and develop a patina that protects it and the juice from further oxidization. Raw aluminum lime juicers are prevalent in Latin American countries. I'd argue that hand squeezing the lime juice had no impact on the flavor and this was just another over embellished story from Vic.

    I wonder how tart cuban limes are. Maybe the drink was more balanced with the Creole lime juice.

    Huh the 1935 la forida recipe book calls for juice of 1/2 a lime. As does the 1947 trader vics bartender guide. What publishing of the Trader Vics bartender guide did you find juice of one lime (1 oz).

    Maraschino so desperately wants to be loved. It’s a unique and strangely delicate flavor, but it’s a bully in cocktails.

    Buy good equipment and booze, learn techniques, make good drinks. Wash rinse repeat.

    Don't blindly believe everything you hear in church my friend. That recipe ranges from 1/2 a lime to 1 lime, it's unlikely that they used the Persian limes we get in grocery stores today. If they're using 1/2 an ounce of key lime juice this drink might be perfectly balanced....
