    I"ve been making these "tortizzas" as I call them for at least 10 years now. You can't beat them for a quick meal. I use the identical method of a hot cast iron pan and about 2 minutes under the broiler. Paper thin onion slivers work really well too.

    Very nice. Always sprinkle plenty of cheese around the edge where the crust meets the pan. It gives you the crispy burnt edges. All hail the Cape Cod Cafe. King of all bar pizza.

    I came to watch it done. My friend has been making these since college. Now, I'm off to the store for product. Love the cast iron pan idea and it only takes 2 minutes on broil. Very cool, thanks for posting.

    I don't have a cast iron pan, but I found a couple of ways to "cheat" - and my way may not give the perfect crust like yours but it is a little easier and the tortilla does crisp up enough to be firm. I get those CHEAP tiny cans of plain tomato sauce from Walmart. I drizzle some on a tortilla on a plate, smear it around (leaving a bit of a border). Then I shake on Italian seasoning (or dried oregano and basil), garlic powder and (important) onion powder. I put on the shredded cheeses (usually mozzerella and parmesan) and toppings, and then I carefully lift it onto the rack of a toaster oven. If the tortilla is a little too big, I just let it press against the glass. About halfway through, I turn it. And if my tortilla is way too big, I trim it into a rectangle that fits in the toaster oven.

    I put the pepperoni in the skillet and cheese on top. Put the sauce on the tottilla and drop it on top of the pepperoni and turn it over, and cook the other side. No oven needed

    Looks great helpful tip on the sauce, put the sauce in the center and with a circular out ward motion spread the sauce, thats how it's done in restaurants but look really good👍👍👍

    Coat bottom ( with a napkin) with olive oil and a little butter and nothing will stick to a well seasoned pan.

    I also make a couple at a time I just spray a cookie sheet and make two at once in the oven set too 400 degrees for about 8 minutes or so but I am going to try it with the cast iron tomorrow!

    Cool. I'd like to hear how they come out. A lot of people kind of worship cast iron like a cult, and your way might be easier and get the same result.

    Christopher, Thanks for the video. I was complaining to my wife how her first attempt at making a tortilla pizza came out too limp. The solution was somewhat obvious: to not load it up with too many toppings and to better cook the tortilla in the process. But how... in a skillet, on a cookie sheet, right on the oven rack? So I looked on KZread and found your video. Exactly what I was looking for. Skillet it is. Hopefully she will be able to follow your excellent instructions (how could she not?). Of course, I could do it myself but she wants to learn. I will know the results of her efforts in the next half-hour. Assume success.

    Great video. Quesodillas were invented by Native Americans. That's what this is, only with Italian toppings. I make them often.

    Made this tonight - using low carb tortillas - definitely not at crisp, but still very tasty! Will definitely make again! Especially for the carb and calorie count I can achieve.

    Oh, my word... I am going to try this with my low carb tortillas! THANKS - ONE OF THE BEST I'VE SEEN SO FAR - AND QUICKEST I have an electric stove (not as good as gas!) any pointers on regulating the heat?

    For the broiler just turn it on all the way. On the stovetop part, it's trial and error. Keep an eye on the bottom and if it's burning before you get a chance to add the toppings and cook the top, turn down the heat. You can always give it an extra 30 seconds to crisp up the bottom after taking it out of the oven, so it's better to undershoot at first.

    Your stove top temperature was a little too high IMHO. Lower it and wait until the cheese just starts to melt and then put in broiler. I find the technique leaves a golden brown bottom and slices are still stiff. Maybe a little more olive oil in the pan. The first pie was a little burnt on bottom. Nice vid though! Thanks.

    You can cook and melt your toppings by placing a lid on top of the pan after browning the crust but at that point you need to lower the temperature a see through lid preferably. That way you can skip the oven And just thought of something you could try a pizza Quesadilla next time
