    This is neither a Korean egg dish nor a Korean style. This is called "DRESS DE OMELETTE" and is one of the types of Japanese omelets. It is a Japanese egg dish made with Japanese recipes. It's a shame that many people mistakenly think it's a Korean egg dish. "DRESS DE OMELETTE" means the drape of women's dresses, and it seems to express "wearing a dress".     @raynaldo arlen k.eman Probably Spicy Cheese sauce since it look exactly like what I cook... Spicy Cheese Powders...( usually it in Reddish Orange Color ) Milk or evaporated milk... Grated Cheese or Cream Cheese just a Handfull... Boil it in sauce pan over low heat... Boil the Milk first then you add spicy cheese powder and those grated cheese or cream cheese... Slowly simmer in low heat until it thicken, if you don't wanna make it thicken add more milk...

    LOL all he did was preheat the pan till it's nice and hot, put the oil in and let it heat up more, swirled it around the pan, took the pan off the heat and put the scoop of egg in where the egg already starts to cook, then put it back on the heat and it will very quickly start to cook and it will start to come away and bubble up. Soon as you see that put the chop sticks at the edge either side of the omelette in the same place opposite each other and push the egg in but the chopstick on the left he didn't move in a straight line like the other he pushed it behind the other which slightly twisted the egg. Then he pinched the egg between the chopsticks hold it with 1 hand, slightly turned the pan then twisted the egg more with the chopsticks, then turned the pan some more, twisted more with the chopsticks while slightly turning the pan, let the rest of the egg turn more solid for a few seconds then put it on the rice. The egg however still looks a bit raw and liquidy which is how they serve it there so you may want to keep it cooking for a 4 or 5 more seconds if you don't want it so raw.

    I just tried this with a cast iron. It started out beautifully, then the edges started sticking and stopped pulling inwards. Had to use a spatula. Still looked decent enough... Id you try this, use a good non-stick and work QUICKLY. Still delicious either way!

    Do a quick re-season on your cast iron. Butter or bacon grease, light coat, upside down in oven, 450° for 45min and let it cool off on its own. Maybe two cycles of that if you don't already have a decent season on the pan. THEN try this again, with a light coat of olive oil and a pat of butter in the pan (the butter floats on the evoo and makes it super slick). Yes work fast. It should slide just fine. Whenever my cast iron won't let a fried egg slip around, I do 1-2 cycles of oven treatment and it's back in good shape.

    IMO it would have been greater if he "sandwiched" two of these omelets (the bottom doesnt have to be tornado) and trapped some of that red sauce in the middle. So when you slice open the egg some of the sauce oozes out beautifully.

    Yes on the sauce. I was hoping someone knew. It's tomato based and likely not crazy spicy, but who knows. In Japan they're crazy for mayo, but this looked more liquid like ranch dressing and I don't know what they like in Korea. Hmmmm....

    @@user-jp4cj3ds7p Actually, no. American Eggs are pasteurized and are less likely to give you the shits. The likelihood of getting Salmonella from US eggs is 1 out of 20k eggs sold. The only reason people think this is due to a salmonella outbreak forcing the US Department of Agriculture to require pasteurization. This also lets our eggs last up to 5 weeks in the fridge. Japanese eggs usually undergo vaccination which reduce the risk of salmonella.

    @@tyg3rs716 eggs are pasteurised, its definitely safe to eat. moreover, salmonella fears have been around for quite a while, but have you not realised how low the chances of getting salmonella? moreover, its highly likely to get salmonella if the shit is raw-raw. that egg is cooked on high heat with nimble hands. to further educate you, if you're so afraid of salmonella, i advise you to buy japanese produced eggs. i don't care how you cook it, but let me tell you, those well-taken care of eggs are indeed more expensive, AND can be eaten raw. you heard me. raw. drink it up and have absolutely no side effects. come on, its 2020. time to open up to new technologies and things.
