Very great video, as much as your Instagram account by the way. Just one question, I think, by adding simple or rich syrup to your cocktails, they will be a little bit too sweet. Is it possible to remove it and add more dilutant instead ? Or this will completely change the cocktail ?

Well, if you find your cocktail too sweet, then adding less syrup is the right call.

This would change the cocktail entirely. They are built to be balanced. If you personally don't want it there the omit it because it's your drink and can do what you want though.

On the negroni, you checked for balance, which was perfect, of course! What would you do to correct balance problems , I.e. what can and could go wrong?

Maybe it's too bitter (add a bit more vermouth) or you like stronger flavors and more pronounced no juniper flavor - add a bit more gin. It's useful if you're making a new cocktail or using new ingredients.

White Russian... one of my my fav! I prefer "caffè borghetti" instead of kalhua which very sweet.. maybe too much for me

That depends on the cocktails your bar serves. Start with that. Shaking, stirring etc.
