Tomato Jam || So Much Better than Ketchup || Small Batch Tomato Canning

I'm not a ketchup eater. Just not a fan. Never have been. This is what I've been waiting for all these years. This is what I'll be using on hamburgers and for dipping fries and sweet potato fries. Yum!

    We are towards the end of our tomato season in central Texas. But luckily I saw this video and I made a batch. My husband and I tasted it and loved it. However, we thought we’d like to spread it on burgers, etc. so I used my immersion blender once it was at the consistency I wanted it. We cannot wait. If I get another 5 lbs of tomatoes, I will be doing some more!!

    115° heat index today and i made this! This recipe is delicious! I skinned the tomatoes though. Hint of sweet and hint of heat! Perfect for so many dishes to eat it with. I used maybe 6-7 lbs if romas and san marzano tomatoes. Got 4 1/2 pints and 2/3 of a fifth one. The fifth one went right in my fridge..lol It is quite a process reducing the tomatoes but i had prepped zucchini and peppers before starting the tomatoes. Zucchini needed to soak in salt for two hours for my relish so it worked out well in timing. Took around 5hrs to finish up both water baths but oh my the results! I took pictures of most that hadn't been taken to the pantry yet, so hopefully I'll get them sent to you. Wish there was a recipe that included a genie for clean up. The kitchen is back in order and no one would know the chaos i had going on in there...pat on the back 😊. Well, time for bed and a much deserved chocolate chip cookie. I allow myself one every night. Looking forward to my next haul of tomatoes by this weekend. The heat has turned up the ripening finally. Edit: i showed your video to an elderly lady, 93, today. We can together! She thought you presented yourself like another Julia Child or Martha Stewart. Said you should be on tv, a good teacher.

    Hi Carter. I was looking for more canning recipes and ways to preserve our garden goodies. I'm glad I found your channel. One veg we've been trying to preserve is spaghetti squash, we've been roasting, draining and freezing as flat as we can in freezer bags. This jam looks delicious!

    Hey Carter, The jars looked beautiful and bright red as you were taking them out of the canner. :) I've had a steam canner on the shelf unopened for 2 years. Time to break it out and get busy. My last 3 canning projects (ground beef, sweet pickle relish and dill pickles) turned out perfect. The ground beef looks beautiful and delicious in the jars. The other canned it water looked as gross as it tasted LOL! I sat down, put on my thinking cap on and what I came up with (from my limited experience) the only thing I did differently was not heat up my lids. I've watched others not heat the lids and you don't think you did in this video, didn't work for me. I've had all jars seal since heating them first.     Just made a full batch and it took nearly 2 hours to cook down. I am in love with this jam and will turn up the “pepper heat” next time and lower the sugar (I used allulose too). My husband doesn’t like hot spicy I do so he loved this one too. Thank you for sharing

    Right now it's Feb in WI but I'm saving this vid for when tomatoes are in season because my son & grands are BIG ketchup fans in this house. One hint I'd like to share when it comes to tomatoes when it comes to adding them to sauces. When chopping them up for anything saucy, remove the seeds & centers from about half the tomatoes. This will reduce the amount of bitterness, especially when canning, & the amount of liquid you need to reduce when cooking them down. It's something I learned from America's Test Kitchen long ago & it's served me well over the years. They found that most of the "tomato-ey" taste came from the gel-like environment around the seeds, but that too much of the seeds when blended into a sauce would add a certain bitterness to it. The solution was removing about half the seeds from any amount of tomatoes being used in a recipe. I also take the time to peel tomatoes but that's just me. Even my grandma, when I was a kid, would tell me I had the patience of a saint when she'd watch me peeling fruit w/out taking the time to eat any of them until I'd peeled ALL of them. Just built differently, I guess. XD ETA: I've found that when canning or just reheating over time, red pepper flakes DON'T mellow but get spicier. If a recipe calls for red pepper flakes, but I want it to just give it a mild kick to the back of the throat, & overall robustness to a red sauce, I use either 1/3 less pepper flakes or 1/4 of the entire amt in cayenne powder. It DOES mellow over time, & disperses better throughout the sauce.

    Looks like a great recipe to serve or bake with yellow squash. I love using a steam canner. I have had 2 of the brand that you have and both have developed pin holes in the bottom. I have a gas stove. They have been replaced with stainless steel that looks just like this one. Thanks for sharing this recipe with us.

    just finished making this and did only half a batch as you did because roma toms here were $5 a lb. (obviously off season) but oh my goodness! delish and a hit with my hunny. this will be good in so many ways! i was thinking it would even be a good dipping sauce for wings too! thanks!

    I’m a mustard girl too! I quite like this tomato jam though. I used to always wear an apron when I was cooking or canning in my regular work clothes, and I would still mess up a top occasionally. Now that I’m retired and wearing more casual clothes, I’m not as worried about it and haven’t messed up a top in ages! Go figure!

    Ketchup, I can take it or leave it. But this looks really good. I have a steam canner; I think I've used it twice. I go up to the dark green too, but temp just keeps cranking until it pegs the needle. I keep dropping the heat, but that needle stays maxed. I guess that's okay, though, and way better than the big bath canner. Thanks for sharing!

    Carter, I'm totally into the ginger, and garlic in anything tomato based. I like controlled aromatics, anytime I can include them. (Same for Cumin) I covered my head when the sugar showed up. Not that I am a sugar policeman... but it seemed like a left turn. I'll return to my seat at the back of the class. I had to remember that it is a jam. 😁 On the other hand... I have some jalapenos ripening up outside... so...substitution is a fun option. Thank you.

    Looks great…as always After your taste test, what are your thoughts about putting the jam on a meatloaf? Meatloaf is my most requested meal around here I ask because I have another big batch of tomatoes and that jam might be what I’m looking for. I’ve still got jars of tomato sauce from last year

    I love meatloaf. I think this jam would be fantastic with it. Whether you spread it on the top before baking or use it as a condiment while eating, I think it works great. Use your judgement on the spice level if you have little ones. It'll mellow as it sits, of course, but having not made this one before, I can't say exactly how much. I don't think it's going to be any spicier than say a Heinz 57, but it is spicier than ketchup or tomato sauce. Keep me posted, Badger!

    Could this be made using frozen tomatoes? I have lots in the freezer, waiting to make sauce. Just wonder if this recipe would work. Just may need to cook down a little longer?

    Sure! I would defrost them first, so you can leave much of the liquid in the bag. Otherwise, normal instructions should be fine. Great idea, Cheryl!

    Welcome, Noni! I am new to the steam canner as well. They've been gaining popularity the past 2-3 years. I love mine! I use allulose in place of sugar in this and nearly every recipe. Stevia is also heat stable and would work fine in this recipe.

    I wonder if you could add roasted red pepper to this jam. As I've said I'm new to canning being in the UK we don't have any safety offices here for canning like you guys do there. I do understand the science of it. I wonder if it would still be safe to steam can adding the roasted red pepper.

    It sounds delicious, but it would alter the pH. Whether the recommendation would still be water bath or switch to pressure canning would be based on the pH of the "new" recipe.

    It's kind of like a spicy-sweet ketchup. Not really a bbq sauce. Not really a ketchup. So far, I'm really liking the steam canner. It uses much less water, so even when full, it doesn't weigh much as I carry it to the sink to pour out the water. Unfilled, it weighs very little. I can easily store it on the top shelf without worrying I'm going to knock myself out. ;-) I've now used it several times. No siphoning so far. No seal failures so far. My only complaint is that I have to stand on my toes to see the gauge! I'll keep you posted on it.

    Thank you for posting this! I have yet to find a sugar free ketchup that tastes good. This may fit the bill~! I haven't tried using allulose yet.

    Kari, I think you're going to like this recipe! So far so good on the steam canner. I've run several batches through it by now. Everything has sealed so far, although I did have 2 with a delayed seal yesterday (maybe 20 minutes). I do love that there's less water to deal with. I like that folks in higher elevations don't need to add processing time; they just need to get the needle in the appropriate green zone. These last two won't apply to you, but I'll mention them anyway. It is super light, which means it's no problem to store it on the top shelf. My only issue so far with it is that I have stand on my toes to see the gauge on the top! What brand electric canner has the steam capability?

    @@growandpreserve I got the Nesco electric canner. I really like the “start and walk away” approach of this canner and have made a couple of jams, bbq pork, and raw pack chicken in it without any problems. For the strawberry jam, I tried using the little Weck jars but opted to water bath process them instead of steam. I will work up the courage and try streaming using this tomato jam recipe when I get back from my vacation. I’m actually passing through both Tennessee and Georgia on this trip!

    @@growandpreserve the Nesco canner isn’t specifically designed for steam canning, but it has a button that says “Water Bath/Steam”. That is why I’m hesitant to try it, but many say it works great. 🤷🏻‍♀️

    a Q i have been trying to get an answer for and am hoping to have answered. i know the USDA says 2 weeks but i find that hard to believe and was wondering if once the tomato jam is opened and in the fridge, how long do you think it will stay good for?

    Wish I had a tested answer for you. I make mine in small jars so they don't end up floating around the fridge. My guess though, is that these high acid sauces, relishes, etc will be fine in the fridge for at least a few weeks.

    Interesting, K. I have heard that at least one of the electric pressure canners has a steam canning setting. I'm not sure how you would monitor the process in a regular pressure canner though. Do you have a link to info I can read?

    @@growandpreserve you fill it a little more than for pressure canning to allow for evaporation, and you start the time when it begins to vent the steady stream, never putting the weight on at all. so, instead of venting for 10 minutes before putting the weight on to pressure can, you leave it off and continue counting 😁

    would drive me crazy to do in smaller loads. We raise meat chickens and the broth alone is several cases of jars worth. Tomato jam has always been on my list of things to try but I've never had enough tomatoes to do more than a year's worth of pizza sauce. This year I found a local farmer that will let me buy sauce tomatoes in bulk. He grows Pisano sauce tomatoes and Sunrise Sauce, which are orange. I bought 30 lbs of Pisano on Saturday and had to break them down in batches because they weren't all ripe at the same time and I bought a small batch of the Sunrise to try. I was initially disappointed in the Sunrise as they were nearly flavorless when fresh, but oh my word they make a good sauce!!! No acidity and naturally sweet once reduced. Glad I did a small batch to try them out. Now I need ideas for using an orange tomato sauce because my family might revolt if I used it as pizza sauce. LOL I did a small batch of the ripened Pisano and they're ok but will need a sweetener to offset the acid. The bulk of the tomatoes ripened yesterday so today I have to get them in the roaster so I can get my kitchen island back. Plus, my tomatoes (San Marzano) are starting to come on strong. I'm up to my eyeballs in tomatoes for the time being! Hopefully with this bulk source of organic tomatoes I can finally try some tomato jam!!!

    @@growandpreserve I decided to use the Pisanos for ketchup... my first time trying it. Going to use the recipe from Living Traditions since she's a self proclaimed ketchup snob and claims this is better than Heinz. I have just the right amount for a half batch, which is perfect based on our annual ketchup usage. I decided to use some of the orange sauce with chicken last night, something like a chicken parm but with a mexican blend of cheeses instead of mozzarella and parm. The sauce reduced even further in the oven and by the end was a deeper orange color, which went well with the cheese, and I think the cheese gave it enough savory flavor to offset the sweet of the sauce. I didn't even season the sauce before use... just salted the chicken and added fresh basil on top of the cheese once it was close to being done. I have only maybe 2-3 pints worth left of the sauce and was too tired to can it last night so I froze it with the plan of getting enough tomatoes to get a full canner load.     @@growandpreserve Thanks Carter! The ketchup is still in the works... I had to turn the temp down for hours to go deal with something. I'm to the point where I've added the onions, vinegar, spices, etc and got the temp up again to break it all down, but this late and I'll probably just put it back on "keep warm" til tomorrow so I don't have to run the blender this late or feel obligated to can it up tonight. I'll be sure to let you know! That LT vid has always stuck in my memory because Sara was so enthusiastic about that ketchup recipe. She was downright giddy! It must be good! Splitting the ingredients in half puts me at risk for being a little too sweet or vinegar-y. I'll have to see and try to adjust if needed.
