I use my food saver bags over and over and over again, I just simply wash them and hang them upside down to dry with pant hanger like things in my spare room. Those rolls of food saver bags are expensive, so I've reused them for forever.

Amazed by all the things you achieved. I have not harvested one tomato this year. Did get some peppers but that is it. It was so blasted hot here (still is) and we were put on water restrictions over a month ago. Not allowed to water yards or gardens AT ALL! Now I have a dead garden and a crusty brown lawn. Didn’t help that we haven’t had any rain either.

Oh, Cindy! That is heartbreaking for a gardener and home preserver! I hope that you have been able to find a good source for your veggies this year. Hoping that Winter is much kinder to you than Summer has been!
Wow, you got a lot done! I have a food saver and never use it. But, i did just get a new upright freezer for my birthday..which is 1/2 full already from the garden. Need to make room for the meat! Im not keen on meat very much. Mostly a fish person but i do love soups and stews in the winter with chicken and beef...and a whole loaf of homemade bread. My biggest downfall when having three bread machines..lol Fresh bread is a must for me with soup etc. Fantastic job you got done this week Carter! I look forward to the freezer organization. I think ive got mine ok for now but new ideas are always welcome so i can improve where needed.

Ahhh...a new freezer with empty space! How nice. And 3 bread machines. I bet you make fabulous breads to go with those soups!
I never wanted anything to do with a souvee(sp?) But you blew my mind today, going from the souvee to freezer(to stay juicy and not freezer burned) and now I'm intrigued. 😮 I know that probably sounds silly, but it never even occurred to me that I could just stick it right into the freezer in the same bag after preparing. I feel so silly 😅 my bf has been trying to get me interested off and on for a while. Thank you for this inspiration.

Not silly at all, Elaine! Everything "new to us" seems unnecessary at first, doesn't it? It's just another tool to preserve food in a way that makes it delicious and easy to use. Keep me posted if you decide to get a Sous Vide!

I tried your roasted potatoes and they were delicious. It also got me thinking about what else I could dry can. I ended up with green beans, butternut squash, yellow neck squash. The only one I will never do again is the yellow squash.. we just didn't care for The taste after cooking it. Like you I love to experiment. I love to make evaporated milk, milk, & butter all shelf stable that will last up to 3 years or more. Happy canning from Tennessee.

Do you can your chili? I make chili for the huge family I no longer have, and found that if I make it once and can the “leftovers”, I can make chili twice a year and enjoy it all year.

I do! It's one of my husband's favorite things to have on the shelf. I try to keep a couple different types of chili on the shelf in pint jars so he can Make his own lunch.

We're watching our 2 & 5-year old grandchildren, while their mom has/had their baby sitter, Lily Sophia. They wake up very early, so while they played, I used the pears we got, for the first time, in 25 years, to make the pear chutney! I didn't have jalapenos, so I used banana peppers and a little cayenne pepper. The chutney reminds me of the green tomato relish my family makes, but with a little heat! I can't taste the pears, but I'm hoping it comes out while it sits on the shelf, for 6 weeks! I only made a single batch, because I wasn't sure how I'd like it. Thanks for your recipes, and the encouragement to make new things.

Just finished 6 half-pints and 3 pints of pear scrap/apple, vanilla, cinnamon jelly, using low sugar pectin! Will help with the many PB&J sandwiches we make for our grandchildren! Jam/jelly is my favorite thing to make, after trying it for the first time last year! It becomes addicting, and I like to see what I can add to the fruit, to make it a more interesting jam/jelly. My favorites are, peach/jalapeno and cranberry/jalapeno, to put a little dollop on crackers with green onion/chive cream cheese!

Wow! You have been very busy. Just an FYI you can reuse those bags. Just cut as close to the seal as possible and then wash and reuse. My mother-in-law use to do this a lot. Hopefully it will work for you as well.

Glad you're getting your Fall garden up and running. I managed to get the kale, red cabbage, and spinach. transplanted, but I'm trying to hold off on broccoli and cauliflower until we get through this next round of 90+ degree days.
Oh Carter, no!!! I've manhandled chilies before and it was terrible! I kept icepacks on my hands for hours! I'm so sorry for you. Looking forward to a freezer tour soon!

@@karenm7433so far I made a rice bowl with vegetables and added the sauce to some home canned chicken to serve with it. I canned a peck of plain beets and the sauce will make a nice glaze.
The oven roasted tomatoes that you froze. You said they lost abut of their chew. Put them in the airfryer for like 2 minutes it fixes it for you. It dries them out because of the moisture they get in the freezer.

@@growandpreserve I'm retired now, but can you really retire from being a chef when you have to cook everyday anyway lol I still do bulk cooking though because I take 2 days a month to fill my freezer full of meals for the days I'm In to much pain to cook. I have fibromyalgia and live alone, so to cut down on takeout, I fill my freezer with ready to eat meals.

Your efforts were great for this challenge. It is possible to re-use your savor bags, just label at top as you seem to do so you cut it off, then wash and re-use them. Most people say not to re-use if you used them for meats but that would of course be up to you. I hope this helps. I have been doing this for about 10 years now.

I need the brine recipe for your peppers. I did get the 3 parts vinegar, 1 water you mention one other item I could not hear very well? Also I got the mustard seeds. Thank you for sharing!! Your canning & food preservation look amazing.

Sure, Debbie! I use 3 parts vinegar, 1 part water, a couple tablespoons of sugar (or Allulose, if you are sugar-free as we are), and mustard seeds. Normally, I fill the jars first to see how much brine I'll need, then plan on 1.25-1.5 cups of brine per jar.

I'm thinking they'll be best for something where they are integral but not the star. The flavor will remain, but I do think the texture will suffer. Although, frankly, I think the texture of jalapenos suffers more when canned than other peppers.
Carter everything looks wonderful. David cannot complain about not having enough peppers. May need to hide a few jars to make it until Christmas. ha ha Have enjoyed seeing all the jars and bags of goodies. Take care and have a good labor day.

What do you do with all your scraps? Like when you cored the tomatoes for roasting. Do you keep for soup or stock making? Dehydrate? Or just compost them?

All the tomato bits and potato peels went into the Lomi (kitchen composter). If I have onion scraps, they generally go into a ziploc in the freezer for broth making. Generally speaking, my first thought is to compost for the garden everything I can.
When you poached the chicken breasts it looked like you maybe added some oil to the bags? Type?

I did, Cheryl. I added just a smidge of EVOO. It's not necessary, but it makes it really easy if I just throw the chicken into the oven/pan/air fryer to brown up. Whatever type oil you prefer is fine. I generally cook with Avocado oil, but I was out.
Is the vacuum sealer you have in your Amazon store the one you are now using that works so well? Does it need specific bags? Thank you, Carter! I am tired of buying food savers and tossing them.

Hi Carter, I've never seen potatoes canned in this way. I've only ever done them in water. Yours look much more appetising. I also saw you do french frys on another video. Is it safe and how long have you been canning this way? Thank you!🙂

Welcome, Deborah! I have done potatoes this way for several years, and I love them. They are really hard to distinguish from fresh. The video I did for you guys with the fries and hashbrowns was the first time I had used russet potatoes with this method. Russets are a bit trickier because they need to be super fresh because they have so many sugars. However, they are excellent too. I've done several more batches as we have eaten through them. For the type in this video, I have eaten them as old as nearly 3 years (for a case that got misplaced in a move), but I find them to be optimal at less than 2 years. The method has not been tested by the USDA. It is considered rebel canning. It is a very popular method among rebel canners. Do your own research, and decide what makes sense for you. If you try them, please come back to let me know what you think. I predict you'll be happy with them!

Thank you for another great video! I love this idea of roasting those tomatoes. Something I want to try pretty quickly. I have a question about soaking or scrubbing the potatoes with the hydrogen peroxide solution. I purchase the 6% solution from azure standard and it is food grade. Could you tell me the ratio of how much to how many gallons of water you use and is there a specific amount of time please? I want to try your potato canning method sometime this fall. I did watch your in-depth potato canning session. Thank you

Hey, Carol! The one I use is 3%, and I use maybe 2-3 tablespoons in a large bowl of water. I don't really consider it a part of the canning process. It's more about starting with clean produce, especially since I'm leaving the skin on. We had so much rain this year that my potatoes were caked in dried mud. Yum, right? After a first cleaning of the potatoes to get the mud I could see off, I dumped them in the bowl with the H2O2, swished around a bit and took a scrub brush to them. It always amazes me how dirty the water is after an H2O2 soak. Keep me posted when you do your potatoes!

I dry canned some potatoes from the video on them. I do not recall anything about hydrogen peroxide. I soaked in citric acid and then salted. Will they be ok?

Yes, they'll be fine. I had to harvest this year in very muddy conditions, so my potatoes were exceptionally covered with soil.

Hey, Susan! Flash freezing is just a term that means to pre-freeze an item before packaging for the freezer. Generally speaking, I use this method to things from being smushed together in one big frozen clump.

When you say “flash freeze”, what do you mean?

It's basically just a quick freeze of something laid out individually on a sheet pan and quickly frozen, so that when you pack it up for storage in the freezer, it doesn't all clump together.

I try to balance it, because the majority here aren't keto, but yes. We are keto about half the time. For the most part, I try to keep meat dishes keto (no beans in the chili, no potatoes in meat dishes for the most part). I also replace sugar with allulose in the vast majority of my recipes calling for sugar. You'll see more of it coming, as I do like to be able to eat the things I can! Are you currently keto, digit?

Congrats on the weight loss, digit! I do use allulose in all my jellies, chutneys, etc, but I always start with the low sugar recipes developed for Pomona's Pectin. That way I'm only subbing 1-2 cups, rather than the 5-7 cups of sugar in traditional recipes. Once something is preserved, sugar's role is to help maintain the texture and color of the food. Allulose doesn't do that. I find that jams, etc do start to degrade in quality after the first year or so. I simply adjust the quantities I make to eat them within about a year. @@DigitHomesteading
