Basil Tea:
2 cups basil leaves
64oz filtered boiled water, slightly cooled
Steep for 20 minutes or overnight in fridge. The longer it sits the stronger it gets.
Strain out leaves
add 1/2 cup honey and a squeeze of lemon juice
Sauerkraut
4 lbs shredded cabbage
2 tbsp redmonds real salt
1 half gallon mason jar or jar of similar size
1 cabbage leaf reserved
Combine cabbage and salt, agitate for 3 minutes then rest for 15 minutes. Come back and agitate for another 3 minutes, let rest for 5 before filling jar.
Every 1/3 stop and tamp the cabbage down firmly. The jar needs to be almost full. Add in remained juices and place cabbage leaf over top pushing everything else down and under. Weight leaf down with a small jar or fermenting weight. Set lid on top but do not tighten. Allow to sit at room temperature for 7-14 days until it is sour enough for your taste. Store in fridge or freezer.

    I enjoy these longer videos, with multiple recipes, that show how you're preserving all the things you're harvesting. But sometimes, especially this time of year, I don't always have time for longer videos, so I'll save them to catch up on in the off-season and take notes for next year.

    I'm preserving tomatoes, cucumbers, peppers and green beans here in middle Tennessee. I just have a few raised beds that I plant in.

    I enjoyed the video as is, no need to change it. I’m preserving okra and jalapeños, serranos, Thai chili peppers and eggplant. Got hot sauce in the making as I type this. I’m freezing my okra for fried okra at a later date.

    I like both video formats. I think for the preservation, the longer format is better. I am harvesting tomatoes, peppers, lima beans, southern cream peas. I just planted a second round of okra, and I planted some black turtle beans. I am planning my fall planting for the end of this month, several root crops and also brassicaceaes. I may try another round of squash, not sure yet.

    If I have any of the brine syrup left from the cowboy candy, I’ve been canning that as well and then I’ll add some mustard to it and it makes a yummy kind of honey mustard flavored sauce to dip things in or we will brush it on pork chops etc.

    I like your longer videos :) we're heading out to rip out the last of thr summer garden and start fall clean up since it seems fall has finally settled in. 90 degrees a couple days ago. Now it seems we eon't see 70 again for who knows how long.

    I saw one homesteader who said if she uses her freeze dryer for a week, it adds an additional $200 to her monthly electric bill. That alone is enough to turn me off of that preservation method forever and yet nobody else who has one is even talking about that. And when people are using that thing in every single video I can’t relate to them anymore so that’s a turn off too

    If you don’t have Temperance Tulsi, I highly recommend it. It smells like tutti fruity and has a taste similar to blue spice, which I also love!

    Oh Kelsey! I am very excited to try the basil tea. I’ve heard it mention several times this summer but as one who isn’t really fond of cooking, if I don’t have a recipe to follow I’m not likely going to try it. I have been making raspberry ice tea (from tea bags, didn’t harvest leaves from my raspberry bushes but I will next year) and we have enjoyed it tremendously. That being said, I will be making the basil tea now as well! I hope you’ll share your tea recipes going forward ☺️. The trays of flowers looked so pretty! The colors were so vibrant. I have made egg rolls in the past and seeing yours makes me want to do those again and my husband will enjoy that too! I am thinking of trying an air fryer to cook them. Have you ever done that? Anyway, lovely video as always. I enjoy the videos no matter the size. If harvesting similar than having the longer video with more preserving ideas is helpful but honestly, it needs to be about what works for you! Have a blessed weekend. 🤗

    I hope you enjoy the basil tea! I always say if you don’t like one Basil, try another! Raspberry leaf is a favorite of mine too! I still have to harvest some leaves 😂 I do not have an air fryer, although I’ve been tempted to purchase one! The idea of not using all that oil sounds great! Thank you friend, blessings 🤍

    Beet root is amazing for people with high blood pressure. My mother has been taking the capsules and because of them she has been taken off of many of her blood pressure medication.

    @@seedandsparrowhomestead I wish we had found out about it sooner for her because of the years of high blood pressure she is not in kidney failure. Although she is doing better than anyone expected. We also have my brother taking it now for his blood pressure. It works really well

    Right now, we're having to harvest beans, cukes, and zukes on an almost daily basis. So that's where I'm expending most of my preservation efforts. Tomatoes and peppers are right around the corner, too!

    I didn't know you could freeze cabbage leaves that way! I had just made cabbage rolls yesterday and filled what leaves I had meat for and I thought it was a shame the rest of the leaves were not filled. I just chopped and placed in the casserole dish. Had I known, they would have gone into the freezer for a quicker prep day of cabbage rolls!

    I make lemon balm, rose, and lavender tea and add honey to taste. Then I make them into popsicles or ice cubes that I add to fresh mint tea. Lemon balm also makes a great simple syrup and throat lozenges. It’s worth trying if you have a surplus 😀

    Kelsey have you ever grown stocks to use as your food dye? They are related to cabbage and are a beautiful flower. I grew them for the fist time this year and got my seed from Baker Creek.

    I was wondering if you would give me some advice please. I canned chicken broth tonight and 1 of my lids I didn't screw on write. I noticed after taking them out of the canner. So I screwed it on and thought to myself I will let it cool and put it in the fridge and use it in a few days. About 5mins later the lid on the jar popped and sealed. Would it be ok if I put it in long storage or use it in a few days still 🤔

    I am interested in the eggroll wrappers you used. Were they gluten free, if so could you tell me what brand they are and where you got them? I like eggrolls etc, but have not found a gluten free wrapper to use.

    Unfortunately these were not 😔 I just served myself some of the filling on its own. I haven’t found a good alternative yet.

    ​@seedandsparrowhomestead I'm not sure if they are the same thing, but have you checked won ton wrappers? Or the wrappers used to make pot stickers? If there is an Asian market near you, maybe they could help you find a non-gluten product.

    12:46 there’s a bug on the leaf you’re using to cover the kraut. I’m not sure if that will affect your final product. I grow food too so I know bugs happen. Just lyk in case it has an affect on the process.
