Fresh tomato soup can’t be beat! I’m right there with you on the small harvests, and like you I mostly enjoy the larger veggies growing on my balcony garden fresh and use my herbs to season what I can. I call it a jam but the recipe is also known as a preserve, either name is delicious. Enjoy! And happy growing!

Wow! Great ideas. Thank YOU for sharing that we can use the "whole" tomato. There is nothing wrong with the seeds, pulp or skin. It's like throwing away good parts of any meal. If anything, if anyone decides not to use those parts they can dry them (dehydrate or freeze dry them and powder them for adding to the recipe. I am very fortunate to find a few flats of canning jars at Nellis AFB in the commissary. They keep the price low. Love, Love, Love these recipes.

I couldn’t agree more with you on not wasting any parts of the tomato and yes, when I Can other tomato recipes that don’t use the seeds I surely do dehydrate them or freeze them to throw into a casserole or soup or sometimes just season them up and eat the skins as a side! This jam truly comes together very quickly. Enjoy!

Hello again, Victoria! Go for it. Think of this recipe as savory sweet stewed tomatoes. A fellow canner here on the channel shared that depending on the variety (he used large tomatoes whereas I used small Roma’s) it may longer for the water content to reduce down to what you like. But that’s the thing, it’s what you like. Before you actually use jars and lids make sure you “lick the spoon” as I like to say. If it’s not your jam, freeze it or purée it for tomato soup. I’d love to hear your feedback! Full recipe is on the blog! It’s so nice to e-meet you!

Hey Cassandra! I think your channel is great and that you are a natural at making these videos. Your videos are often therapeutic sessions of calm and inspiration, in what is often a crazy world. I’ve recommended your channel to others. One really quick question (unless I missed it) is that it looks like you are using 8oz jars for this recipe, correct? It is sometimes hard to tell because I can’t get Mason brand jars around here so can’t match the shape for that “aha!”visual recognition. I think you should have 100x the amount of subscribers and that it will happen as people discover you. (And yeah, I’m a guy,). Edited to add: I just made this recipe from home-grown Roma tomatoes a neighbor gave me. They gave off a lot of water, so just FYI, the actual simmer to achieve a glaze consistency turned out to be 2 hours. It is an easy-as-pie recipe. It just took much longer than expected. But it tastes wonderful!

Hi Joe! It’s been an incredibly busy work week for me so I apologize for the delay! Thank you so much for introducing yourself and your compliments! I’m feel in love with canning a few years ago and it’s been my saving grace from yes a very crazy world! It’s nice to finally feel like I have other canning friends, like you. You totally bring up a good point and I edited my blog tin note that depending on the tomato variety simmer time may vary. THANK YOU for this feedback. I’m so glad I have a blog that I can edit and incorporate feedback. Yes, I used both 8 and 4 oz mason jars. For most water bee bath recipes NCHFP recommends not exceeding 8 ounce. Until recently I was nervous about my own jar and lid collection but inventory has finally come back in my area. I hope you can get your hands on some jars soon! And I LOVE it that you’re a guy-it was my dad that got me started with canning whenever he’s here we can together and we talk canning recipes. Canning is for everybody--and especially those of us that love quality food, homemade taste, the incredible value over time of canning and the artistry of a cabinet lined with beautiful glass jars!!! Currently my computer is down (it’s a 10 year old laptop) but I’m ordering a new desktop that should arrive in a week or two. You have brought such joy into my morning! Bless you friend!.

@@BecomingaFarmGirl Hi Cassandra! Thank you for the warm welcome and the smile it brought to my face. I waited a bit to reply so that I would have some items to share with you: (1) I made meatloaf using these tomato preserves + the sweet & spicy onion jam + allspice (and the usual meatloaf ingredients) and it was a huge hit. My guest at dinner said it was the best meatloaf ever. The preserves, onion jam & allspice really upp’d the umami and gave it a middle eastern flair. (2) I have recently experienced seal failures (not sealing and seals popping several weeks later) with Ball lids purchased this year (in packs and on new jars) which is disappointing and frustrating, despite me being meticulous when I can. I am going to write to them (others are complaining about similar issues on KZread and in Facebook groups) but have now ordered Harvest Guard reusable lids/gaskets. I have temporarily lost some trust in Ball. (3) I recently saw an indoor/outdoor vertical growing tower that uses light rights to grow the food indoors, so I thought I would share the product name. It is Lettuce Grow and can be found at lettucegrow.com. It would likely solve that homesteading issue for apartment growers who don’t even have a deck or terrace and for whom a back yard garden is not a possibility. Have a great weekend!

Great recipe! Could I add jalapeños to it?

Hi Cassandra! Do you think I could use frozen romas instead of fresh? I have some leftover in my freezer from a bulk buy.

Frozen would totally work! Just defrost them in the pan you’ll use so you have the tomato juice to add flavor!
