King Estate Winery Tomato Jam Recipe

We have a number of popular dishes and condiments at our estate restaurant for which we constantly receive recipe requests. One of those recipes is the King Estate Tomato Jam which is featured on our Charcuterie Plate and a few other dishes. By popular demand, here is the recipe for King Estate Tomato Jam, presented by Sous Chef Benjamin Nadolny.
Ingredients:
1.5# Ripe, cored, and chopped tomatoes
1C Sugar
2TB Lime juice
1TB Minced ginger
1tsp Ground cumin
1tsp Cinnamon
1tsp Ground cloves
1tsp Salt
Preparation:
Combine all ingredients in a heavy saucepan, bring to a boil, stirring often.
Reduce heat and simmer until mixture has a thick, jam-like consistency, about 1 hour. Recipe yields about 2 cups.

I made this today and it turned out great! I've been craving tomato jam since I had it in a restaurant in Gig Harbor a year ago. Your recipe was the only one that sounded close to that original experience. Thank you for sharing! SP in Mt Vernon WA.
Not only is this recipe surprisingly good, everyone we've served it to had no clue it was tomato based. I'm missing a key ingredient so heading off to the grocery store now for fresh ginger. Cheers!

My first experience with tomato jam was on a gourmet chicken sandwich at a restaurant called Ram and it was absolutely delicious. I have been interested in it ever since. I am thinking of making some this weekend. I once had a papple (pear and apple) and this would pair very nicely with it.
The farm across the street makes almost the same jam, it's amazing!!! I'm trying to replicate it right now, they don't add cumin though and add red pepper flakes instead and I am obsessed with it!

When conveying a recipe, one's enunciation has to be clear and understandable.... great recipe ..
Should be interesting, I added 1tbs on the spices, couldn't see the tbs on the spoon till after.
