    I enjoy the reverse sear on my Kamado Joe. Tried Your 2-1-0.5 cooking method for ribs the other weekend. Dang! Okay! Wife said best I've ever made. It was a total time saver too. No more 3-2-1 method for me. Thanks for that.

    New subscriber and love your videos. Just recently purchased my Kamado a few months ago and I'm learning a lot watching your videos. Great quality and content, you'll have more subs in no time. Do you use drip pans when you smoke or reverse sear? Or just let it drip onto the heat deflector plates?

  • @KamadoMax

    @KamadoMax

    Thanks for watching and subscribing!! If I have a drip pan around, I might use it for a long cook like pork butt or ribs, but most of the time I just let it hit the deflector. If the deflector gets dirty after the cook, I'll sometimes flip them over and crank the temp so everything burns off.

    Great looking steak! With a little more care in your sear flipping you could have that nice crisscross pattern on your steak but it's only for aesthetics. Well done!

    Thanks for watching! I usually don't go for the grill marks - I like to try to get a even crust all over which is why I flip a lot!

    How much charcoal do you put in initially? Love yours video and by the way Atl Grill Company is a great place. Also would love to see you smoke a salmon filet. Thank you

    Thanks so much for watching! It's funny, I literally just posted a smoked salmon video! I used a pretty full basket just so I could get the flames as close to the steak as possible.

    I have the Big Joe. I’m a newbie. Just got it a couple a months ago. I have been very successful at doing low and slow but my problem comes with inferno mode to sear. It never gets as hot as I would hope. What’s the secret?

  • @KamadoMax

    @KamadoMax

    Thanks for watching! I would say you need to make sure you have enough charcoal to allow for super hot - it can only get so how with a smaller bed of coals. I would also make sure you have good airflow. If you have a good basket of coals and it's still no hot, open up the dome, make sure the dust basket is clear.

    Maybe it was a lack of coal. As I said I’m new to this. I know there was plenty of air flow. I had just cleaned out the ash and with both the bottom and top vents wide open I could only get it to about 450.
