Sushi restaurant Nohachi has been in Asakusa, Tokyo for over 50 years.
Founded by the previous owner, this popular restaurant is loved by many local customers, and is famous for its famous ``Ichigrain Sushi,'' the smallest sushi in the world, which is visited by tourists visiting Asakusa and from overseas after hearing about it.
Edomae-style handiwork, in which each item is carefully prepared, and since our predecessor was a craftsman who purchased many toppings and served them to customers, he still prepares 40 to 50 types of toppings every day. I was able to capture this precious preparation scene that captures that spirit and the chef's care and consideration for his customers.
