I’m so frustrated! I’ve tried making Mayo twice now. One with egg and olive oil, and now this one with aquafaba and avocado oil (I’m trying to avoid vegetable oil). Both times I followed the directions exactly and started on the bottom until it emulsified and then lift up slowly. Both times it emulsified and then as I lifted slowly the whole thing became runny. I just want to cry because I’ve wasted all those ingredients and I just don’t understand why I can’t make it fluffy and creamy like on all these videos. 😢 EDIT: After I stopped crying 😂 I kept looking for a fix and found one. I’m posting it here in case anyone else has the same issue I did. For anyone wondering, it wasn’t a problem with the recipe. I’m pretty sure it’s my immersion blender. The part with the blade just heats up to much. Next time I might refrigerate that part and use it on low. So here’s the fix: Take about 3 tablespoons aquafaba and whisk that in a new bowl until it’s very fluffy. (My immersion blender has a whisk attachment that doesn’t get hot so I used that. I suppose you could do this by hand though.) Then SLOWLY add in the mix that’s too liquidy, just 1-2 tablespoons at a time until fluffy. I added small amounts VERY slowly at first until I could see it was working. And it worked wonderfully!!! It is beautiful and creamy and thick and DELICIOUS! I am so relieved I didn’t waste all those ingredients again! 😃 They said you might have to add a bit more salt, mustard, or vinegar/lemon because of the extra aquafaba, but I didn’t think mine needed any extra seasonings. I can’t wait to make a sandwich or something with this tomorrow. Thank you so much for the recipe! 😊

Vegetable is highly processed, it is not good for the body. Maybe use olive or avocado oils.

It's very important to start the blender at the bottom, and when you'll see mayo starts forming, then start moving your blender up. Use a narrow jar/beaker for the best result👍

try to add a little more oil. You can also cook down the aquafaba to thicken it. let it get cold before you use it

I did it with cold aquafaba and it came out perfect but you must keep the immersion blender at the bottom OR gradually pour in the oil, instead of pouring it all in at the beginning.
What is aquafaba?
