    Hmm, how about some kind of mushroom concentrate, cook mushrooms getting most of the water out then blending them into a paste and using it the same way, one compound butter and one cooked with the steak sous-vide.

    Actually spirulina is a type of bacteria called cyanobacteria and is a biomass cyanobacteria and has 3 different species Arthrospira plantensis, Arthrospira Fusiformis, and Arthrospira maxima. The species used in this video that can is consumed by humans is the Arthrospira plantensis species

    That's an improper name, they are a type of photosynthetic bacteria, called cyanobacteria. The term of blue-green algae should be put out of use since algae are eukaryotes, both single-celled and multi-celled

    The whole method was bizarre... I've had chilaquiles from so many families and it's always made with corn tortillas fried with the sauce in the pan, eggs cooked sunny-side up in indents in the mix. Supposed to be soggy and crunchy, with a crust much like quesasbirrias.

    Everyone please take note, Guga always uses outside skirt steaks(smaller than inside skirt seen at most grocery stores) they are far more tender than inside skirt so try to find them

    You should do one with three control steaks, all with butter melted over the top, but two of them with different food coloring in the butter, to see how much their perception changes the experience (if at all). OBviously don't tell them that the two colored ones are the same steak.

    Guga. Give this a try. The only way I Sous Vide steaks nowadays. New York strip. Briefly dip it in pickle juice. Remove. Ground pepper on the outside, coarse black pepper on the fat. Vacuum seal in bag and refrigerate for 24 hours. Next day...remove from bag. Drizzle Worcestershire sauce over the steak (both sides) and season with salt and paprika. Seal it again in bag and Sous Vide to your liking. Crust it in a pan, briefly baste with butter, and plate. Pour leftover butter over the steak and rest for 10 mins. Would LOVE to hear what you lads think of this one!

    Prefab chips turned your enchiladas project into a sorry mix. The salsa starts good, but then you got to cut and fry your tortilla chips… try that and you’ll add 20% more realness to your chilaquiles (the natural choice is green sauce or red sauce or both)

    Here's a question: if you sous-vide a steak (smoke, reverse sear, whatever), but you can't sear it for some reason, so you put the steak back in the fridge for later. If you pull it out, will searing it be enough to warm it up all the way through? I'm just wondering about those times where something happens (kid gets hurt), so you have a cooked, but not seared, steak. Not wanting to overcook it, I'm wondering how do you get it warmed up without doing so. Or, does just giving it a quick sear warm it up enough?
