This “Simple” Dessert is a MASTERPIECE (Coffee Éclair)

An eclair is a pastry made from choux dough, filled with custard or cream and then topped with a glaze or icing. The most common is Chocolate Eclair, but in Paris you can also find Coffee Eclair which happens to be my favourite. Inside, it is usually a creme patissiere. The dough is the same as for profiteroles. It looks very simple but it is incredibly complicated.

As soon as you mentioned improving the coffee and knowing a guy all suspenseful I thought it's going to be Hoffmann isn't it... And it was! And I love it! As fan of both channels, I'm very much look forwards to this collaboration :D

James Hoffmann, yeah who else would it be. He's "the" coffee expert for the job. I actually squeed when Alex called him. I love James' KZread channel. An award winning barista himself, James teaches different techniques in coffee preparation, how to choose the right beans and ingredients, testing different coffee-making gadgets, and he has done a lot of crazy and funny things involving coffee. He's done some baking and cooking with coffee too. I'm so excited to see how he could help with Alex's coffee dilemma.

He hinted in the comments of the 1rst crème brûlée video that this series is about "Paris' best" If that's correct there will probably be more sweets (I'm hoping for mille-feuilles) but possibly also savoury treats you can find in bakeries (Paris' best quiche? fougasse? jambon-beurre?)
The crossover we didn't know that we needed. Really excited for the next episode.

What I liked most about this was that it was a professional pastry chef cooking with equipment that I can get or already have at home... it makes it feel somehow more accessible, like maybe if I practice more, I can bake e'clair like Utopie. Also, make sure that James brings his Bripe.

Yay! when I saw those pestle and mortar ground beans I thought what would James think of this. Cannot wait for the next episode!
As soon as you picked up the phone I knew you were calling James Hoffmann 🤣 Can't wait for that video!!
I'm excited for this one! Shout out to This Old Tony for tuning me into this channel!
Fantastic that Chef wanted to come to the studio to help out. Huge props to the company he works at, they're ARTISTES !
This collab is going to be epic. Can't wait to see you and James Hoffman in a video.
Been to Paris recently, tried coffee eclair, fell in love with it, came here for a recipe... have to continue my search
The moment you were talking about the coffee flavour being better I thought, imagine if James Hoffmann could be involved here, but they don't know each other, it'd never happen. They're two of my favourite, yet completely unrelated channels why would they ---OH MY GOD HE'S CALLING HIM! What a crossover!
Omg the cinematography and editing just makes these vids so delectable. Not to mention the freaking food too! As always, well done Alex!
You know Alex is serious about the coffee flavour when James Hoffmann is getting involved!
James Hoffman, the internets man of coffee, known for turning deserts into coffee. Now its just up to you to help him turn his coffee into a desert. Cant wait for the next one.
When you said "Let me call somebody" I immediately thought: "He's not gonna call James Hoffmann, is he?" And then this mad man actually does. This is gonna be good.
Chef’s smile at 10:12 is the ultimate feeling: when you give someone the food you made, and you know it’s delicious and the other person knows it too now
I think part of what makes these dishes memorable is the research for the most authentic way to make them. Experiencing the recipe that made people fall in love with a flavor and the technique involved is part of savoring them.
Please let this be a series on classic French desserts!
Left one of James' videos to watch this! Can't wait to see what the two of you can do with coffee eclair.
i just love how much Alex videography skills improved. Both in image and sharing an adventerous story in each of his creations.
Even in Germany i have heared of UTOPIE Bakery. They are outrageously good! I was in Paris for a Buisiness Trip just a few months ago and every day i went there and ate my way through their offered Food and everything was excellent. My Business Partner recommended me this Bakery while i was preparing for the trip. If anyone reading this is in Paris or plans to go there make going to this Bakery a big priority :D
Tout au long des infusions de café, je pensais au recettes que Hoffman fait parfois. Et à la fin, Boom!!!! Quel punch!! Je suis un fan de vos deux channels. Bien hâte de voir la suite! Merci Alex!!!! Ça fait ma journée!
I don‘t know what‘s cooler, that pastry chef coming nonchalant to your studio and making probably the best eclairs i‘ve seen, or you calling james to up the coffee flavour on that eclair?!
James Hoffman is awesome. What a great collab, I'm excited to see it.
Even before I finish the video I know this is gonna be a great one. I am OBSESSED with eclairs, they're my favorite pastry since childhood. And now that i live in France, my preferred choice is also mostly coffee eclair for a couple of reasons. First, in my country (Turkey) we classically only have chocolate glazed eclairs with 2 types of filling: vanilla custard and chocolate custard. And I usually prefer vanilla custard+chocolate glaze mix cause it feels so much lighter. But these aren't available in France, so sometimes chocolate over chocolate is a bit too much !! Thus i go for my next favorite flavor, coffee! Always goes great with the choux and not as overwhelming, yum 😋
Always nice to see a proffessional at work! The level of detail and pride shines through.
From the very beginning of the video when Alex said Coffee, I knew he would call KZread’s most famous coffee expert. I am ready for this crossover!
I knew it would be James Hoffman at the end!!! So hyped for this collab.
Wow. Alex this Video is another Masterpiece! The Camerawork, Editing and Storytelling are absolutely awesome. In my mind I could smell and taste everything I saw. And I guess we reached a new stage, with the master chef teaching you and us in your legendary studio-kitchen.
I knew it! As soon as coffee was mentioned, I knew where you would turn to! I am so excited for this collab!
seeing the chef cook in your studio where you have way more options to film and light it was beautiful! Thank you very much Alex
It's such a beautiful thing to see a chef so happy about their food being enjoyed.

What an awesome cliffhanger! Can't wait to see my two most loved food experts in one video!! 😍 And of cause great video! They always make me so excited to learn and experiment more with food :)
First thought that came to mind was to do a slow brew with the coffee on medium-low heat so you extract as much of the flavour you can without boiling it off, in as little water as you can manage; basically, concentrate it down. Or maybe do a regular strong brewing and then use your desiccator to drive off the moisture and concentrate the coffee flavours that way. Interested to see what James will suggest!

I had an eclair from a popular, busy bakery in paris, blew my mind..... dark chocolate glaze, sweet cream filling, perfect pastry crust. So so good.
