Just like trees, mold has roots that go around the whole bread, that means even in the parts you can't see mold, it's still there. The effects of mold can be from mild to life threatening.

Mold appreciates lots of water and humidity, like any other fungus. The usual conditions outside of water aren’t really ideal for any fungus, but the mold can survive.
