Probably Turneric, its orange in some countries, they call it java rice, but in some places, use only food color. No doubt they will use turmeric in the first world countries. Unless New York has become a third world zone too like San Francisco.

The cycle is: Great restaurant becomes local favorite, usually amazing food, great price, very chill service. Great restaurant gets bought out, sells out and becomes more of a tourist spot. New spot is always there for the locals to find, the next sell out is always right around the corner. And by the time that nice little spot sells out, the big corporate one is in the past, or even bigger and worse than before. Just read about how Chipotle started for example.

It's silly to call that selling out. It's called expansion. And to expand you have to standardize across locations. That's why they do things like sauce packets. Will it be as good? Certainly not, but Halal Guys is now international with stand alone restaurants.
