Use saikyo miso for this as it is sweeter and will complement the flavor of the salmon better, you could also add yuzu juice to give it citrus notes. The left over miso can be reduced and made into a sauce for your salmon or grilled vegetable skewers.

I don't think the fish can be hurt anymore. Although it might affect the flavor when cooking is finished.

@@nyanneko20I was thinking the same thing. Freeze it in ice cube trays so you can use it 1 cube at a time and not worry about it going bad because of the fish. In fact the salmon probably makes it taste better Another thing: make a nice bowl of miso sauce to put over meat. Mix 3 parts water, 1 part miso, 2 parts jam, and a clove of garlic. Heat until thick then melt 2 parts butter in. So good on everything

uhhhh or you could just try not over cooking it very simple...and doesnt take 2 days
