Thermomix Mee Siam Kuah Singapore I Mee Siam with Gravy

Mee Siam Kuah Kak Niz's style

Bahan Rencah :
40 g cili kering
4 biji bawang besar ~300 g
6 ulas bawang putih ~ 35 g
25 g belacan
30 g udang kering- cuci, rendam toskan
120 g minyak zaitun
60 g taucho
1. Siapkan Cili : sila ikuti video ini untuk lihat cara buang biji dengan cepat gunakan Thermomix : • Cara paling mudah buan...
2. Kisar cili, bawang besar, bawang putih, belacan dan udang kering 30 saat, speed 10.
3. Scrape MB dan tumis 20 minit, speed 1.
4. Masukkan taucheo masak lagi 3 minit speed 1.5.
5. Bahagikan pes rencah kepada 2 bahagian
Kuah Mee Siam:
1 bahagian rencah
2 sb pes asam jawa
1 asam keping
15 g kacang tanah kisar
1200 g air
4-8 sm gula secukup rasa
1 st garam secukup rasa
6. Masukkan satu bahagian rencah ke dalam mixing bowl(MB) dan masukkan air, pes asam jawa, asam keping, gula dan garam. Didihkan 100 degC KETTLE. Tuangkan ke dalam thermoserver. Ketepikan.
Mee Siam goreng:
1 pkt bihun (300g)
1 bahagian rencah (yang selebihnya)
300 g udang dibuang kulit tinggalkan ekor sahaja
1 st garam - secukup rasa
130 g Taugeh
Daun kucai dihiris
Tahu dipotong kecil dan digoreng
Telur rebus, sambal tumis dan limau kasturi
7. Masukkan bahan rencah kedalam MB. Masukkan garam dan 500 g air. Didihkan 100 degC KETTLE.
8. Sementara itu, bilas bihun di dalam paketnya.
9. Bila (7) sudah mendidih masukkan udang, bihun dan taugeh.
10. Masak 4 minit, varoma, REVERSE, spoon speed.
11. Diamkan mee siam selama 5 minit sebelum dihidangkan bersama kuahnya, tabur daun kucai, tahu goreng, telur rebus, sambal tumis dan limau kasturi.

Kak Niz's Mee Siam With Gravy
Ingredients:
40 g of dried chillies
4 large onions ~ 300 g
6 cloves garlic ~ 35 g
25 g belacan
30 g of dried shrimp- wash, soak to soften and drained
120 g of olive oil
60 g taucho (fermented soy beans)
1. Prepare Chili: please see the video on how to deseed dried chillies using Thermomix : • Cara paling mudah buan...
2. Finely blend chilli, onion, garlic, belacan and dried shrimp for 30 seconds, speed 10.
3. Scrape bowl and sauté 20 minutes, speed 1.
4. Add taucho cook another 3 minutes speed 1.5.
5. Divide the paste into 2.
Mee Siam's Gravy:
1 part mee siam's paste above
2 tbsp tamarind paste
1 piece tamarind slice
15 g ground peanuts
1200 g of water
4-8 cm of sugar to taste
1 st salt to taste
6. Put mee siam paste into the MB and add water, tamarind paste, tamarind pieces, sugar and salt. Boil 100 degC KETTLE. Pour into a thermoserver. Set it aside.
Fried mee siam noodles:
1 pkt rice vermicelli (300g)
The balanced part mee siam's paste
300 g of shrimp removed skin leaving only the tail
1 st salt - to taste
130 g bean sprouts
sliced chives
Tofu cut small and fried
Boiled eggs, sambal and lime halves
7. Put the remaining mee siam paste into the MB. Add salt and 500 g of water. Boil 100 degC KETTLE.
8. Meanwhile, rinse the vermicelli in the package and cut its end using scissors.
9. When (7) is boiling, add shrimp, vermicelli and bean sprouts.
10. Cook 4 minutes, Varoma, REVERSE spoon speed.
11. Let the mee siam stand for 5 minutes before serving with the gravy, sprinkle with chives, fried tofu, boiled egg, sambal and slime halves.

    Perhatian: Selepas masuk bihun masak 4 minit, Varoma, REVERSE, spoon speed. Video tersilap kerana tidak tulis dan sebut 'REVERSE'. Mohon maaf ye. Attention: Cook the bee hoon for 4 minutes, Varoma ,REVERSE, spoon speed. The video does not indicate 'REVERSE'. I'm so sorry.

    Pertama kali rasa mee siam kuah Singapura hati terus tertawan. Memang sungguh sedap. Pedas, sedikit masam dan manis itu yang menambat selera saya. Izinkan saya mengambil ilmunya daripada video ini. Tq puan.

    Saya tak pernah buat separuh adunan … boleh dicuba tetapi saya rasa masa menumis kena dipendekkan sebab bahan sudah berkurang.
